Cinnamon Banana Bean Bread with Red Kidney Beans
Full of cinnamon goodness, this blender banana bean bread is mom-approved and too good to be true! If you’re looking for a way to sneak in some extra protein and fiber to kick start the school year, this recipe is for you.
1 cup cooked light red kidney beans
2 ripe bananas
3 eggs
2 tsp vanilla extract
¾ cup canola oil
2/3 cup light brown sugar, packed
2 cups flour
1 ½ tsp baking soda
2 tsp ground cinnamon
Pinch salt
½ cup toasted pecans (optional)
Directions:
1. Place all ingredients into a powerful blender and blend until almost smooth.
2. Pour batter into a bread loaf pan lined with parchment paper.
3. Bake at 375 for 55-65 minutes until a toothpick comes out clean.
4. Enjoy alone or with honey butter, hazelnut spread or jam.

Garbanzo beans

2 cups celery
2 2/3 cups onion
1 red bell pepper
Brine:
3 cups white vinegar
1 1/2 cups sugar
1 tbsp mustard seed
1 tsp celery seed
4 tsp canning salt
1 1/4 cups water
