Episode 78 - Kitty finally puts to rest the age old argument of which is the better autumn food, apples or pumpkin, by combining them together into an Infinity Gauntlet of flavors. The richness of pumpkin, the sharpness of Granny Smith Apples, and the sweet finish of carmel cinnamon streusel is a delicious mix.This easy fun recipe is a hit for everyone!

Ingredients
Muffin
2 ½ c ap flour
2 c sugar
1 T pumpkin pie spice
1 t baking soda
½ t salt
2 eggs
1 c pumpkin puree
½ c oil
2 cups diced apple
Streusel
2 tablespoons all-purpose flour
¼ c sugar
½ t cinnamon
4 T butter
Carmel sauce to taste

Directions
Preheat oven to 350
Lightly grease muffin cups in a muffin tin
Mix together flour, sugar, spice baking soda and salt
Whisk together eggs, pumpkin, and oil
Mix pumpkin mixture in with flour mixture, add in apples
Spoon into muffin cups
Mix together flour, sugar and cinnamon
Cut in butter until crumbles form
Sprinkle onto muffins and bake for 35 minutes
While hot top with carmel sauce

1 cup granulated Sugar
1/3 cup heavy cream
6 tablespoon unsalted butter
¼ cup water
2 tablespoon light corn syrup
2 teaspoon salt
2 teaspoon vanilla extract

????FOR THE PIE CRUST????:
(Can buy this instead of making if you want to simplify)
1 ½ cup flour
12 tablespoon unstalted butter
½ cup fine ground cornmeal
1 tablespoon granulated sugar
1 teaspoon salt
¼ cup water
2 teaspoon apple cider vinegar

????PUMPKIN FILLING????:
30 oz pumpkin puree (2 standard 15oz cans)
1 ¼ cup (277g) heavy cream
1/3 cup (129g) light corn syrup
5 tablespoon (64g) unsalted butter
2 ½ cup (443g) white chocolate chips or chopped white chocolate
2 teaspoon cinnamon
1 teaspoon cardamom
½ teaspoon allspice
½ teaspoon ginger
1 pinch nutmeg
1 pinch clove
(if you can’t get the above spices, cinnamon through clove, then use 3 teaspoon pumpkin pie spice)
½ teaspoon salt

????FOR THE STREUSSEL????:
½ cup flour
1/3 cup light brown sugar
1/3 cup oats
6 tablespoon unsalted butter
2 teaspoon cinnamon
½ teaspoon cardamom
Big pinch salt

????WHIP CREAM TOPPING????(optional)

1/3 cup powdered sugar
1 tsp vanilla

Pumpkin Cupcakes
Makes 1 dozen cupcakes

Ingredients:
1 ½ cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp ginger
¼ tsp salt
1 stick (1/2 cup) butter, room temperature
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
¾ cups pumpkin purée

Directions:
1. Whisk together flour, baking soda, spices, and salt.
2. In a large bowl, cream together butter and sugar until light and fluffy. Crack in eggs one at a time, beating after each addition. Mix in vanilla extract.
3. Alternate adding flour and pumpkin puree, beginning and ending with the flour. Scoop into 12 cupcake liners, and bake at 350F for 18 min.

Cream Cheese Frosting Ingredients
8 oz softened cream cheese
3 cups powdered sugar
3 T milk
Mix cream cheese until smooth, then mix in powdered sugar 1 cup at a time until incorporated. Beat in 3 T of milk.
