瑪芬和杯子蛋糕有什麼不一樣呢?!瑪芬可以當成正餐,糖份低很多,也會加入堅果、水果。口感紮實,搭配一杯咖啡,就是一個簡單的早餐!奇異果瑪芬比較少見,但酸酸甜甜的風味製作成點心,特別的開胃!奇異果的酸甜,搭配椰子油的香醇,和大燕麥的麥香,讓這個瑪芬口味層次豐富,在加上加入優格,讓口感更加柔軟。
烘焙筆記:
- 奇異果盡量壓碎,太大塊會造成水果周圍的麵糊烤不熟
- 大燕麥要和液體混合,如和麵粉類混合,容易造成麵粉卡在燕麥紋路內,無法攪拌均勻
- 綠色或黃金奇異果都可以使用,綠色較酸,黃金奇異果比較甜,依個人喜好搭配。

2tsp baking soda
2 kiwi
2 egg
90 coconut oil
1/2 tsp salt
150 brown sugar
180 plain yogurt
2 tbsp vanilla extract
2 tbsp lemon juice
8 tbsp oats

We like to enjoy hot muffins right out of the oven, smeared with ricotta, cream cheese or butter.You can also serve them as a decadent dessert accompanied by scoops of vanilla ice cream, chopped nuts, caramel sauce and sliced kiwifruit.A muffin is an individual-sized, baked product most commonly associated with morning mealtime. It’s one of the most popular on-the-go breakfasts that can easily be made ahead and stored in the freezer to enjoy later.

To make Kiwi muffins:
• In a bowl, add
1-1/2 cup wheat flour,
1 tsp baking powder,
1/2 cup powdered brown sugar,
1/2 tsp cinnamon powder & sift well.
• In a different bowl, add
1 egg,
1 tsp vanilla extract,
60 ml olive oil & mix well.
• Add 1-1/2 cup warm milk & mix again.
• Mix the wet and dry ingredients together.
• Now, add 2 chopped kiwis & mix.
• Line a muffin tray & fill with the batter.
• In a pre-heated oven, bake the muffins at 190°C Cor 12-15 minutes.
• Once baked, let cool in the tray.
• Kiwi muffins are ready, serve & enjoy these healthy muffins.
