Vegetable Kurma, Mixed Vegetable Kurma Recipe for vegetarian or vegan to enjoy the korma recipe. This Indian Vegetable Korma is loaded with potatoes, tomatoes, carrots, peas, and green beans and optionally cauliflower. In other word, you can call them Vegetable stew with coconut curry, and also its shares the similarities with navratan korma recipe.
The creamy vegetable kurma curry is made of simple ingredients: onions, green chilli, ginger, garlic, cashews and water. That’s actually five ingredients in total which form the simple base for this kurma curry.
Whatever you choose to have this vegetable korma curry with, a side of naan or on a bed of steaming rice, do it in large doses, because the crunchy vegetables bring in all the magic into every bite. This vegetable kurma recipe is best suited side dish for chapati. It's one of the best vagan curry recipe, try this mix veg sabji (sabzi) at home,

Beans (Chopped) 1/4 Cup
Potato (Chopped) 1/4 Cup
Carrot (Chopped) 1/4 Cup
Green peas (Fresh) 1/4 Cup
Water 1 Cup
Salt
Oil 2 Tbsp
Bay leaves 1
Cinnamon stick 1
Cloves 2
Cardamom 2
Star anise (Small piece)
Onion(Chopped) 1
Green chilli 2
Ginger & garlic paste 1 Tbsp
Tomato(Chopped) 1
Chilli powder 1/2 Tsp
Coriander powder 1 1/2 Tsp
Garam masala 1/2 Tsp
Coriander leaves (Chopped)
To grind:
Coconut 1/2 Cup
Cashews 5
Poppy seeds 1 Tsp (Optional)
Fennel seeds 1 Tsp
Water

Ingredients:
For making Vegetable Kurma:
Oil - 2 tbsp
Whole Spices (Cinnamon, Cloves, Cardamom pods, Star anise, Bay leaf)
Onions - 2 nos. (finely chopped)
Green chilies - 2 nos. (slit)
Curry Leaves
Ginger garlic paste - 1 tsp
Tomatoes - 3 nos. (finely chopped)
Salt - 1 tsp
Turmeric Powder - 1/4 tsp
Chilli Powder - 2 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1 tsp
Garam Masala - 1 tsp
Carrot - 1 cup
Beans - 1 cup
Green Peas - 1 cup
Potato - 1 cup
Cauliflower - 1 cup
Water - 2 cups
Chopped Coriander Leaves
Ground Masala Paste
For making the Masala Paste:
Grated Coconut - 1/2 cup
Cashew Nuts
Roasted Chana Dal - 1 tbsp
Fennel Seeds - 1 tsp
Water
Method:
For making Vegetable Kurma:
1. To a kadai, add oil and whole spices.
2. Then add onions, green chilies and curry leaves.
3. Saute till the onions turn golden brown in color.
4. Add ginger garlic paste and mix everything well.
5. Add tomatoes and cook until they are mushy.
6. Next add salt, turmeric powder, chili powder, coriander powder, cumin powder and garam masala powder. Mix everything.
7. To this masala, add carrot, beans, green peas, potatoes, cauliflower and mix again.
8. Add water and keep the flame on medium.
9. Cover the kadai and cook for 15 mins.
10. After 15 mins, add the ground masala paste and mix it along with the vegetables.
11. Cover the kadai again and cook for 5 mins.
12. Finally, garnish the Kurma with coriander leaves.
13. Yummy Vegetable Kurma is ready to be served.
For making the Masala Paste:
1. To a mixer jar, add grated coconut, cashew nuts, roasted chana dal, fennel seeds and water.
2. Grind these ingredients into a fine paste.
3. Masala paste for the curry is ready.

Carrot-1
Potato-2
Beans-12-15
Big Onion-1/2 of small
Curry leaves-1 string
Water-2cup
Salt-to taste
Coriander leaves-few
Curd-2tbsp
Cashewnuts-6
For the masala paste
Big onion-1/4 of 1
Ginger-small piece
Garlic-1clove
Green chilli-1-2
Curry leaves-5-6 leaves
Cloves-1
Cinnamon-1 small
Cardamom-1
Fennel Seeds-1/4tsp
Grated Coconut-4tbsp
Turmeric powder-1/2tsp
Coriander powder-1/4tsp
Method
Wash and peel vegetables..Cut into small pieces(potato,carrot,beans) ..(if u want u can include cauliflower ,green peas etc)
In a cooker add all these vegetable along with 1/2 of a big onion (sliced ) and water …
Cook until done..(one whistle is enough)
Let it cool down and open the cooker and set aside
Add all ingredients listed in masala paste into a blender and make a very fine paste ..
Add this paste to the cooked vegetable along with salt and allow to boil ..
Stir well until the boiling point .. Allow to thicken the gravy to a semi medium consistency ..
Garnish with coriander leaves ..

Eating more vegetables is generally considered a good thing, but can often be boring and uninspired. One of my favorite ways to eat lots of them is Vegetable Korma or Curry. There are countless ways to do it, but this the version I have adapted for my home kitchen.

INGREDIENTS LIST
Vegetables
- 110 g frozen peas (about a cup)
- 250 g cauliflower (1/2 head)
- 150 g carrots (2 carrots)
- 300 g potatoes (4 small Yukon gold)
- Salt
Seasoning paste
- Mustard seed
- Cumin seed
- 2 cloves Garlic, peeled
- 1 knob Ginger, peeled
Other Components
- 30 g oil
- 1 green chile, minced
- 1/4 onion, diced
- 1 small tomato, diced
- Turmeric
- Kashmiri Chili Powder (substitute: Cayenne)
- 60 g plain yogurt
- 30 g coconut cream (Sub 160 g coconut milk)
- Water to the thin out sauce
- Salt to taste

Ingredients -
FOR THE CURRY:
Oil or Ghee - ¼ cup
Black cardamom - 1 no
Cardamom - 6-7nos
Cloves - 5-6 nos
Mace (javitri) - 2 large blades
Star Anise (chakri phool) - 1 no
Cinnamon (1.5”) - 1no
Onion roughly diced - 3cups
Garlic roughly cut - 7-8cloves
Ginger roughly chopped - 2tbsp
Green chillies chopped - 2nos
Cashewnuts/Almond/Peanut - ¼ cup
Turmeric - 1 tsp
Kashmiri Chilli powder - 1tbsp
Coriander powder - 1 ½ tbsp
Cumin powder - 2tsp
Curd - 1 cup
Tomato roughly diced - 2cups
Salt - to taste
Kasoori Methi leaves - 2tsp
Water - 1 ½ lt
FOR VEGGIES:
Oil - a dash
Butter - 2tbsp
Shahi jeera - 1tsp
Garlic chopped - 1tsp
Ginger chopped - 1tsp
Green chilli chopped - 1tsp
Potato diced - ½ cup
Carrots diced - ½ cup
Beans cut small - ½ cup
Cauliflower florets - 1cup
Water chestnut (Singhara) diced - ½ cup
Salt - to taste
Turmeric - ½ tsp
Red chilli powder - ½ tsp
Cumin powder - ½ tsp
Coriander powder - 1tsp
Kasoori methi leaves - 1tsp
