#Ukrainian Christmas dish - Kutya
Kutya is the main dish on the Ukrainian Christmas table.
The traditional ingredients of Kutya are usually wheat (but also other types of groats), honey, poppy seeds, raisins and nuts. The dish is a fasting one. It is served as the first course at the Christmas table.
Often is served with “Uzvar” a dried fruit compote.
Ingredients for Kutya
???? Wheat groats - 300 g
???? Raisins - 70 g
???? Poppy seeds - 40 g
???? Walnuts - 20 g
???? Honey - 70 g
Ingredients for Uzvar
???? Dried apples - 50 g
???? Dried pears - 50 g
???? Prunes - 30 g
???? Aronia berries - 20 g
???? Mountain-ash berries - 20 g
???? Sugar - 50 g (can be less or more sweetened)
Let’s prepare Kutya: rinse wheat groats under water.
Put to boil in a ratio of 1:5 to water.
Separately put raisins, nuts, poppy seeds in a bowl. Pour boiling water and let stand for 30 minutes, covered with a plate on top.
Drain the water. Add the mixture to the cooked wheat. Add the honey and stir. Allow to cool before eating.
Kutya can be eaten as it is, or you can pour the Uzvar drink over it.
Prepare the Uzvar: pour the mixture of dry fruits with water, bring to a boil. Add sugar. Cook over medium heat for another 20 minutes. Cover with a lid and let infuse for 1 hour.

Мы не религиозны, однако не считаем нужным из-за этого запрещать себе лакомиться некоторыми блюдами, имеющими отношение к церковным праздникам, особенно если они такие вкусные как традиционная карпатская рождественская кутя.
Для многих веганок и веганов праздники - это, часто, проблема, т.к. не всегда понятно как разделить праздничное застолье со всеядными родственниками, друзьями и т.д. В сочельник наша сегодняшняя кутя решает вопрос на все 100%: вы не только не останетесь голодными, но и поразите окружающих чудесами веганской кухни)
Традиционно в кутю идёт мёд, но мы его заменим любым другим жидким подсластителем (мы использовали сироп топинамбура, но вы можете взять сироп агавы, кленовый и т.п.) и вуаля: веганская кутя!

Нам надо:
Пшеничная крупа - 1 стакан
Грецкие орехи - 100г
Курага - 75г
Изюм - 75г
Мак - 50г
Жидкий подсластитель - 2-3 ст.л.
Пшеничную крупу нужно приготовить так, как написано на упаковке. Предварительно можно замочить на 4 часа или даже на ночь, чтобы потом меньше варить, но, в любом случае, контролируйте процесс, чтобы не переварить. Если не любите пшеничную крупу (или не хотите возиться), можно взять рис.

Ukrainian Christmas Eve dishes
Christmas in Ukraine is celebrated on the 7th January is because, like many countries where the main Church is the Orthodox Church, they use the old 'Julian' calendar for their church festivals.
The main Christmas meal, called 'Sviata Vecheria' (or Holy Supper) is eaten on Christmas Eve (6th January). Traditionally people fast (don't eat anything) all day but you might start the day drinking some holy water that has been blessed at church.
You can't start eating the meal until the first star is seen in the sky. So people (especially the hungry ones!) go outside as soon as it start getting dark in the afternoon to try and spot the first star. The star represents the journey of the Wise Men to find Jesus and that Jesus has been born, so Christmas can start!
The meal normally has 12 dishes which represent Jesus's 12 disciples. Traditionally the dishes don't have any meat, eggs or milk in them. The main dish is often 'kutia' a type of a kind of sweet porridge made of wheat.
