BRAISED LAMB WITH PEAR STUFFING
RECIPE BELOW:

RECIPE
Serves 4-6
1.7kg boned shoulder lamb ( butcher can prep for you)
2 tablespoons of olive oil
8 shallots/ spring onions, chopped
1 cup dry white wine
1 cup beef stock
1/2 cup water
STUFFING
1 tablespoon of olive oil
1 onion, chopped
1/2 cup breadcrumbs
a handful of parsley, chopped
2 tablespoons of milk
Salt and pepper
4 pears, cut into pieces
Heat the oil in the pan. Add the onion and fry until soft. Add the shallots/spring onions, salt and pepper and parsley. Fry for a minute. Add breadcrumbs, turn heat off and add milk. Combine well.
Remove excess fat off the shoulder. Lay it flat on a board, skin side down. Spread the onion mixture well over the shoulder. Arrange the pears in a single layer over the onion mixture. Roll up lamb and secure with kitchen cooking string.
Place lamb in a dish, out the stock, white wine, olive oil over the lamb. Add 1/2 cup of water to the dish.
When braising, heat oil and brown the lamb for a minute of two on a pan before placing in oven.
Cover the pan and cook in approx 150 (low heat) for 1hr 30mins. Remove from oven, let rest for a few minutes. Cut off the cooking string and remove off the lamb. Carve lamb into thick slices, pour the juices over. Ready to serve.

Ingredients:
1-1/2 K pieces of lamb

1 tsp Grated ginger
1/4 cup of olive oil
1 tsp Black pepper
1 tsp Turmeric (curcuma)
1 tsp Salt
Green olive as preferred
Method:
Cook the lamb with olive oil, then add the onion, garlic and ginger
Add all the spices and leave it to cook for an hour
Add the green olives and let it simmer for 10 more minutes then serve

Let's continue our comfort food series with this easy and supper yummy Okra Beef Tagine.
RECIPE:
INGREDIENTS:
350 grams okra (lady fingers)
500 grams chuck tender beef
1 large tomato, grated
1 medium sized onion
1 garlic clove
A medium bunch of parsley
1 teaspoon ground ginger
1/4 teaspoon ground turmeric
A pinch of saffron threads (optional)
Salt and pepper, to taste
1 tablespoon tomato paste
3 tablespoons olive oil
DIRECTIONS:
Step 1: Prepare the Ingredients
- Finely chop the onion, grate the garlic clove, grate the tomato, and finely chop the parsley.
Step2: Cooking the Meat
1- On medium heat, in a large pot, add the olive oil. Once hot, add the chopped onion and garlic. Mix and cook for two minutes.
2- Add the spices: ground ginger, turmeric, salt, and pepper. Mix and continue cooking for another 3 minutes.
3- Place the meat pieces in the pot and mix with the onions. Cook the meat from both sides, for around 5 minutes.
4- Add the grated tomato and the chopped parsley. Mix.
5- Cover the pot and continue cooking the meat for another 5 minutes so it absorbs all the flavors.
6- Now cover the meat with water, increase the heat to medium high, cover the pot, and cook the meat for about 1 hour and 15 minutes.
7- Check on the meat from time to time, stir, and add water if necessary until the meat is almost cooked and becomes tender.
8- When the meat is almost done, add the tomato paste to the sauce. Mix and cook for another 10 minutes until the meat is done.
Step3: Preparing the Okra
1- Clean the okra, Cut the small tip from top and carefully remove the sides without making any cuts, then with a knife scrape the tiny hairs from the okra skin.
2- Wash the okra in water.
3- Add the okra to the pot. Cover the pot and let the okra cook with the meat and the sauce for around 10 minutes or until the okra becomes soft.
4- Serve this tagine immediately with some chopped parsley on top for extra flavor.

Let's continue the La Maison Arabe ( dada series this Berber Vegetable Tagine, a staple dish in Moroccan cuisine!
WRITTEN RECIPE:
INGREDIENTS:
Vegetables
½ onion
1 medium red-ripe tomato
1 small carrot
1 small turnip
1 small zucchini
1 small potato
½ red bell pepper
100 grams (3.5 oz.) green beans
2 small cauliflower florets
A handful of green peas, shelled
Marinade
1 teaspoon paprika
1 teaspoon ground ginger
½ teaspoon ground turmeric
¼ teaspoon ground cumin
Salt and pepper, to taste
1 tablespoon finely chopped flat-leaf parsley
1 garlic clove, crushed
1 tablespoon vegetable oil
1 tablespoon olive oil
4 tablespoons water
RECIPE:
1- Prepare the vegetables:
- Onion: finely chop
- Tomato: peel, seed, and finely chop
- Carrot: peel, cut in half, slice each half lengthwise, remove and discard the core, then slice each quarter into medium strips
- Turnip: peel, slice in half lengthwise, then slice into medium strips
- Potato: peel and cut into quarters
- Zucchini: trim ends and cut into quarters
- Red bell pepper: trim ends, seed, and slice into medium strips
- Green beans: trim ends and cut into medium strips
2- To make the spice marinade, combine all the marinade ingredients in a bowl and mix well.
3- Place the chopped onion and tomato in the tagine plate. Add 2 tablespoons of the spice marinade, mix, cover the tagine and cook on medium heat for 5 minutes until the onion and tomato melt into a thick sauce.
4- Nicely display the vegetables in the tagine, starting with the vegetables that take the longest to cook (carrot, turnip, potato) then leaving at the top the ones that take less time to cook (zucchini, cauliflower, red bell pepper, green beans, and green peas).
5- Pour the spice marinade all over the vegetables.
6- Cover the tagine and cook on medium heat for 45 minutes. From time to time check on the vegetables to make sure that there is enough liquid in the tagine. Add water if necessary, but only small amounts at a time. Also, occasionally, take some of the sauce in the tagine and baste it over the vegetables so that those placed on top absorb the marinade flavors.
7- Serve hot with crusty bread.
