4 Lamb cutlets
3/4 lb Tomatoes
2 Onions
1 Clove Garlic
1/2 c Dry white wine
2 oz Butter
Method: 1. Skin the tomatoes and slice the onions and simmer in butter with garlic. 2. Add the white wine when the tomatoes and onions are almost cooked and
cook for a further ten minutes. 3. Place the cutlets in a buttered casserole and pour the mixture over
them. 4. Cover and cook for 90 minutes at 350 degrees. Serves 4

????Ingredients
3 pounds lamb chops
1 tbsp scallions
1 tbsp fresh thyme
1 tbsp fresh rosemary
1/2 cup honey
3 tbsp dark Soya
3 tbsp wet jerk season
1 tbsp oil
4 cloves garlic
1/2 onion
????Seasoning
1 tbsp garlic powder
1 tsp paprika
2 tsp lamb season
2 tsp black pepper
2 tsp jerk powder season
2 tsp All Purpose Season
1 tsp browning or dark Soya
1 tbsp unsalted butter
1/2 cup water
????brow for 4 minutes on each side

PISTACHIO CRUSTED LAMB CHOPS RECIPE: How to make the best pistachio crusted lamb chops with sweet potato purée and pomegranate glaze | Ant’s Kitchen

Ingredients for:
1) Pistachio Crusted Lamb:
- Lamb Chops – 500 grams
- Salt & Pepper – ¼ Teaspoon
- Rosemary – ½ Teaspoon
- Olive Oil – 1 Tablespoon
- Pistachio – 1 Cup
- Fresh Mint – ¼ Cup
- Dijon Mustard
2) Sweet Potato Purée:
- Sweet Potato – 400 grams
- Heavy Cream – 150 ml
- Butter – 1 Tablespoon
3) Pomegranate Glaze:
- Pomegranate - 1 Head
- Lemon Juice – ½ Lemon
- Brown Sugar – 1 Table Spoon
- Red Wine – ¼ Cup
- Fresh Mint – 1 Tablespoon
4) Glazed Carrots:
- Carrots – 2 Medium Size
- Butter – 1 Tablespoon
- Brown Sugar – 1 Tablespoon
- Salt – ¼ Teaspoon
Preparation:
- Cut the sweet potato into small cube and cook in boiling water for 20 to 25 minutes until fully soft and tender.
- Put the cooked potatoes in a blender. Add the heavy cream and the butter. Blend until smooth and creamy.
- Pour the sweet potato puree in a plate and refrigerate for 30 minutes.
- Cut the carrots into rustic cuts and cook in boiling water for 15 minutes. Remove and set aside.
- On a new chopping board, add the lamb chops and season with salt and pepper. Sprinkle rosemary and add olive oil. Repeat for the second side.
- Pre-heat a skillet on medium to high heat and add the lamb chops. Cook the lamb chops until a brown crust forms on the bottom (4 to 6 minutes). Flip the lamb chops and cook for an additional 4 to 6 minutes.
- Remove the lamb chops and transfer to a plate to rest for 10 to 15 minutes.
- Cut the pomegranate and add to a preheated pan on medium heat.
- Add the juice of half a lemon and a tablespoon of brown sugar.
- Mix well to combine and let cook for 5 minutes.
- Add ¼ cup of red wine and cook until reduced and thickened.
- Sieve the pomegranate reduction sauce to collect all the juice.
- Roughly chop fresh mint and add to the pomegranate sauce.
- Add butter in the same pan the lamb chops were cooked. Add brown sugar and the pre-cooked carrots. Season with salt.
- Let cook the carrots for 5 minutes.
- Prepare the pistachio crust by adding a cup of pistachio and fresh mint to a blender and blend.
Process:
- Brush the lamb chops with dijon mustard which will act as a sticking layer to the chops and dip the chops in the pistachio mixture.
- Coat well the lamb chops to form a proper pistachio crust
- On a plate add the sweet potato puree, pomegranate sauce, glazed carrots, and the pistachio crusted lamb chops.
- Serve.
