How To make Lamb Souvlaki
Karen Mintzias 1 Leg of lamb; boned, cubed*
5 Baby lamb sweetbreads, opt.*
4 Baby lamb kidneys, opt. *
1/4 c Olive oil
Lemon's juice 1/4 c Wine
1/4 ts Thyme
1/4 ts Oregano
1/4 ts Rosemary
1 Bay leaf; crushed
2 Garlic cloves; crushed
Freshly ground black pepper 8 Bay leaves; cut
Firm tomatoes (opt); 1/4'd Green peppers (opt); cubed Salt Oregano and lemon quarters *Note: Lamb meat(s) should be cut into cubes the size of walnuts. Place the lamb, sweetbreads, and kidney cubes in a large non-aluminum bowl. Make a marinade of the oil, lemon juice, wine, herbs, garlic, and pepper and pour over the meat. Marinate in the refrigerator, preferably overnight, or for at least 3 hours. Thread the meat on long skewers alternating the bay leaves with the tomatoes and peppers, if desired. Grill over hot coals or broil 6 inches from the heat, brushing with the remaining marinade and turning frequently. Season with salt and pepper, then remove the meat from the skewers to a warm platter and crush oregano over the top. Garnish with lemon quarters and serve hot. LAMB SOUVLAKI
LAMB SOUVLAKI
Ingredients:
- 2 kg lamb leg or shoulder, cut into approximately 25g square pieces
- 2 yellow peppers
- 2 red peppers
- 2 green peppers
- 1 large onion
- 3 tomatoes
- Salt, pepper, and oregano
- Olive oil and lemon juice
- 60 ml lemon juice
- 40 ml olive oil
- 3 cloves of garlic
- 30 ml water
- 4 sprigs of thyme
- Salt and pepper
Method:
1. Cut the vegetables into squares similar in size to the meat.
2. Skewer the meat and vegetables on a wooden stick that has been soaked in water to prevent burning.
3. Place a piece of meat, onion, pepper, and tomato on the skewer, and repeat until the skewer is filled. Typically, it takes 5 pieces to make a 250g souvlaki.
4. Refrigerate the souvlaki for 3 hours.
5. Prepare the olive oil and lemon dressing by mixing all the ingredients in a blender.
6. Preheat the grill and place the souvlaki skewers close together to prevent air from passing through.
7. Turn the skewers and season with salt and pepper from all sides.
8. After turning the souvlaki 4 times and achieving a nice color, brush them with the olive oil and lemon dressing twice. Continue grilling for 5 minutes.
9. Serve with toasted bread, onion slices, parsley, olive oil, lemon juice, salt, pepper, and tomato.

Lamb Souvlaki skewers are Greek kebabs with bold garlic-lemon-oregano flavour. Sensational flavours for lamb! The smell when they hit the grill are to-die-for. Make wraps with pita bread or plates with lemon rice! - N x ❤️
Lamb Souvlaki
1.2 kg/ 2.4 lb boneless lamb leg fat trimmed, cut into 2.5cm/1” cubes (~900g / 1.8lb after trimming)
1 tsp cooking/kosher salt
1/2 tsp black pepper
1 tbsp extra virgin olive oil
12 x 18cm/7” wooden or bamboo skewers (or metal), soaked in water for 30 min if cooking on BBQ
LAMB SOUVLAKI MARINADE:
5 garlic cloves finely minced
5 tbsp lemon juice
2 tsp lemon zest
2 tsp dried oregano
3 fresh bay leaves crushed in hand (or 2 dried kept whole)
1/3 cup white wine vinegar (sub apple cider, sherry or red wine vinegar)
3 tbsp extra virgin olive oil
1 tsp cooking/kosher salt
1. Coat lamb with the Marinade Ingredients in a bowl and marinate for 12 – 24 hours in the fridge. Thread onto skewers.
2. Stove: Sprinkle skewers with the salt & pepper. Heat the oil in a large skillet over medium high heat. Cook half the skewers for 3 min, turn then cook the other side for 3 min until nicely seared. Transfer to platter, cook remaining skewers.
3. BBQ: Drizzle skewers with oil, sprinkle with salt & pepper. Cook on medium high preheated BBQ (flat iron side) 3 min each side.
4. Pile onto platter and serve with warmed pita breads, Greek salad chopped small or finely sliced lettuce + tomato slices, with tzatziki or hummus. (For quick sauce, just use yogurt + olive oil + squeeze of lemon + salt + pepper).

Greek Souvlaki Kebabs | Akis Petretzikis
Just when you thought food couldn’t get any tastier Akis comes along with this delicious pork kebab recipe. Tender pieces of meat tossed in herbs and grilled on skewers until beautifully golden. Serve in warm pita bread and top with juicy tomatoes, onions and a good dollop of spicy tzatziki sauce. Full of flavour, wonderfully filling and the perfect food to serve at parties.
