How To make Lazy Enchiladas
1 md Onion chopped
1/2 md Red/green pepper chopped
2 Cloves garlic minced
9 10 med mushrooms sliced
-thinly 1 15oz can stewed tomatoes,
-with juice 1/2 c Frozen corn kernels
1 15-oz can black beans
-rinsed 1/2 t Cinammon
1/2 -1 tsp. oregano
1 T Chili powder(maybe more)
1 2tsp cumin(maybe more start
-with one) -pinch or more of cayenne 4 Flour tortillas(not the huge
-size, more if you don't -stuff'em) 1. Water saute onion,pepper garlic, until onion translucent. 2. Add spices
and let them coat the onion mixture. 3. Add mushrooms and let cook briefly for 1-2 minutes. 4. Add can of stewed tomatoes and bring to simmer. 5. Reduce heat and simmer for 10 minutes. 6. Add corn and simmer for 10 more minutes. 7. Add beans and simmer for 5 minutes. 8. Warm tortillas so they are pliable, and with a slotted spoon scoop mixture in tortilla, roll, and place on dinner plate. With tablespoon, take liquid and pour over tortillas. Repeat until done. Serves 2 -3 people, depending on side dishes and hunger:) NOTE: Simmering times are approximate, but you essentially want to let it cook so the flavors have combined, but not to reduce to a true stew. INGREDIENTS:
1.5 lbs. boneless skinless raw chicken breasts (don't use any more than 1.5 pounds, the casserole will seem dry if you do).
28 oz. can Red Enchilada Sauce I use El Pato Brand or Los Palmas
Add these items at the end:
10 corn tortillas I use a 10-12 oz. package of soft corn tortillas.
2 cups grated cheddar cheese divided
3.8 oz. can black olives divided
SLOW COOKER SIZE:
INSTRUCTIONS:
Put the chicken breasts and the enchilada sauce in your slow cooker.
Cook on HIGH for 4 hours or LOW for 6-8 hours.
Shred the chicken with 2 forks right in the slow cooker.
Cut the tortillas into strips, add to chicken and sauce. Stir.
Add 1/2 cup of cheese and half the olives into the sauce and chicken mixture. Stir again.
Flatten the mixture.
Add the rest of the cheese and the olives on top.
Cook on low for about 40 – 60 minutes longer.
Top with sour cream (optional)

24 corn tortillas

2 lbs tomatillos (about 18)
10 jalapeños or serranos

For the enchiladas

The Easiest Enchiladas
Preheat to 400 degrees F
Lay out frozen burritos in pan
Pour your favorite enchilada sauce
Sprinkle cheese all over
Put in oven for 25 minutes
EASY enchiladas recipe with frozen taquitos aka LAZY enchiladas
To make easy enchiladas recipe with frozen taquitos, you only need 4 ingredients. This dish is sometimes called lazy enchiladas because they taste like enchiladas, but they are made from frozen taquitos.
I like using frozen taquitos because you don't have to spend time stuffing and rolling corn tortillas that like to tear.
Ingredients:
2 cans refried beans, 16 oz can size
1 package frozen taquitos chicken, beef, or vegetarian, approximately 1 lb 5 oz (15-20 taquitos)
1 can mild enchilada sauce 28 ounces
2 cups shredded cheese Mexican blend or cheddar
Optional Ingredients:
Sour cream
Chopped cilantro
Diced tomatoes
Avocado
green onions
Black olives
Instructions:
Preheat your oven to 375°F (190°C) and spray your casserole dish with cooking spray to prevent sticking.
Spread the refried beans on the bottom of the baking dish in an even layer. Pour half of the enchilada sauce on top of the beans layer.
Arrange a layer of taquitos on top of the sauce. The number of taquitos will depend on the brand, but typically it will be around 15-20 taquitos.
Pour the remaining enchilada sauce over the taquitos, ensuring they are evenly coated.
Sprinkle the shredded cheese generously over the top of the casserole, covering it entirely.
Cover the casserole with foil to keep the cheese from burning.
Place the casserole dish in the preheated oven and bake for 35 minutes.
After 35 minutes, carefully remove the foil. Return the casserole to the oven and bake for an additional 5 minutes or until the cheese turns bubbly and slightly golden.
Once the cheese is perfectly melted and the casserole is cooked to perfection, remove it from the oven and let it cool for a few minutes.
