How To make Lebkuchen (German Honey Cakes)
1 c Honey
3/4 c Light brown sugar
1 ea Lemon; juice of
2 ea Eggs; beaten
2 1/2 c Flour; sifted
1 ts Baking soda
1/2 ts Nutmeg
1/2 ts Cloves
1 ts Cinnamon
1/4 c Almonds; shredded
1/4 c Citron; chopped
Combine honey, sugar, lemon juice and rind from the lemon. Beat in egg. Sift dry ingredients and add to egg mixture. Add citron and nuts and let stand one day (covered). Roll out dough 1/2 inch thick and cut into fancy shapes. Bake on buttered cookie sheet in 400 degree oven until browned.

What's Lebkuchen you ask? Lebkuchen are a honey sweetened German Cookie packed with Christmas Spices, Nuts and Citrus Zests. They are Cookies, BUT with a soft cakey centre that actually improves over time so best to bake a day ahead! Lebkuchen are really quick to make, and easy too, so a fab recipe to be baking before the big day arrives. If you don't have all the spices listed, don't worry! Just go with what you have.

170g Muscavado Sugar (or Dark Brown Sugar)
180g Runny Honey
55g Soft Unsalted Butter
2 Eggs
300g Plain Flour
150g Ground Almonds
2 tbsp Cocoa Powder
2 tsp Ginger
1.5 tsp Cinnamon
1/2 tsp Mace
1/2 tsp Cloves
1/4 tsp Nutmeg
1/4 tsp Allspice
1/2 tsp Baking Powder
1/4 tsp Bicarbonate of Soda
1/2 tsp Salt
Zest of 1 Lemon
Icing Sugar
Cold Water
Rum (or Lemon Juice or just water :) )

You can eat it plain or cover with chocolate!!

For 6 cookies (about 10cm)
-25g Butter
-80g Brown sugar
-1 Egg
-90g Honey
-Vanilla extract
-150g Flour
-75g Almond flour
-1 Tbsp Cocoa powder
-1/4 Tsp Baking powder
-1/8 Tsp Baking Soda
-1/2 Tsp Cinnamon
-1/2 Tsp Ginger
-1/4 Tsp allspice
-1/4 Tsp Nutmeg

LEBKUCHEN - My Favorite Christmas Delicacy
Lebkuchen is a german favorite enjoyed during the festive season. It goes well with a cup of tea or coffee. Please give this easy recipe a try.
Recipe makes about 20 pieces of Lebkuchen. Bake in 180 °C preheated Oven for 20-25 minutes.
Ingredients
Blended Haselnuts - 130g
Blended Almonds - 130g
Brown Sugar - 120g
Honey - 1 tbsp
Eggs - 4
Salt - Pinch
Candied Lemon - 100g
Candied Orange - 100g
Baking Wafers - 20 pieces 70mm wafers
Spices
Kardamom powder - Pinch
Clove Powder - 1/2 tsp
Cinnamon Powder- 1/2 tsp
Koriander Powder - 1/2 tsp
Nutmeg Powder- 1/2 tsp
Ginger Powder - 1/2 tsp
Anis Powder - 1/4 tsp
Mace - 1/4 tsp
Coating
Dark chocolate- 80g
Butter - 40g
Powdered Sugar - 70g
Lemon Juice- 3 tbsp
