La frittata di spaghetti è un piatto unico tipico della cucina napoletana, conosciuto anche come “frittata di maccheroni” . Quella che vi propongo è la versione della frittata di spaghetti ripiena e cioè con farcitura interna di salame e formaggio. La caratteristica che rende unica e buonissima la frittata di spaghetti è la sua tipica superficie dorata e croccante.
Buona calda ma anche fredda, la pizza di pasta è ideale anche per accompagnarci con gusto nelle gite fuori porta e durante un pic nic in mare e in montagna. Altro aspetto da non sottovalutare è che la frittata di pasta è un piatto buono e anche economico! Nasce infatti come ricetta di recupero e si può fare anche con spaghetti avanzati.
Se preferite una pizza di pasta più leggera potete anche cuocerla al forno. ????

HOW TO MAKE: Frittata di Pasta or Pizza Pasta | David Rocco's Recipes
Hey guys!
Today I'm showing you how to make one of my favourite recipes! This one is a classic and it's so easy to make!!!
Ingredients:
Leftover bucatini pasta, 120g
Vegetable Oil, 1/2 cup
Eggs, large 2
Pecorino or Parmigiano Regiano, 1/2 cup
Salt
Pepper
Preparation:
In a large mixing bowl add eggs, Parmigiano Reggiano or Pecorino, salt and pepper and whisk well. Take your leftover pasta, (you can use any cut of leftover pasta that was prepared with a simple tomato sauce) and add to the beaten egg mixture. Make sure the pasta is fully coated.
In a frying pan, add oil and heat until very hot, add the combined mixture of pasta and egg into the hot pan with oil and flatten the pasta like a pizza. Fry until the bottom side is crispy and golden. With a plate larger then the pan, flip the pan over so the uncooked mixture is on the plate and then gently slide the uncooked side on to the frying pan and cook until bottom side is crispy and golden. About 4 - 5 min each side. Remove from pan and place on an absorbent paper towel to drain the excess oil and let cool down.
Serve warm or at room temperature.

Pasta frittata
6 to 7 large eggs
1/2 cup grated Parmesan or pecorino cheese
2 tablespoons olive oil plus oil or butter for the skillet
salt and black pepper
Garlic powder
4 ounces cold leftover spaghetti (sauced or unsauced, preferably placed on a dinner plate in a nest and refrigerated)
Crack the eggs into a bowl and whisk very well, until streaks no longer appear. Mix in the cheese, oil, salt, and a grind of pepper and garlic.
Put the leftover pasta in a large nonstick skillet* over medium-high heat along with a couple tablespoons water and heat until it's warm but before it starts to sizzle.
Now pour the whisked egg mixture over the pasta.
Turn the heat to low and occasionally rotate the skillet a quarter turn if the egg seems to be cooking unevenly around the edges. When the perimeter of the frittata looks set and the center is still somewhat liquid, which should be after about 8 minutes, run a table knife around the skillet to loosen the sides of the frittata and carefully slip a thin metal spatula under it to loosen the underside. Invert a plate over the skillet and place one hand over the plate and the other hand on the skillet handle. Here comes the exciting part—you’re going to flip the frittata onto the plate. (We admit that it can end in disaster, but you have to stay confident and strong.) You don’t want the frittata to slide onto the plate or fold over, so the motion should be up and over, not just over, and it has to happen kind of quickly. Alley-oop, and it’s on the plate and the skillet is clean. Set the plate down and quickly slick the skillet with a little more oil or butter. Then, with the help of the spatula, encourage the frittata to slide back in. Don’t worry if things are looking a little Humpty Dumpty—just fit it all back together again and keep it over low heat until it's cooked through, about 7 more minutes.
Once all cooked just slide it off the skillet onto your serving plate.

Ingredients and recipe:
Pour 1 can of corn in a colander
Crack 1 egg in the corn
Salt and black pepper
Add 1/3cup corn starch
Mix well
Pour olive oil in the pan
Add the corn mixture to the pan
Sprinkle 30g mozzarella cheese
Fry for 5 minutes on medium-low heat
Sprinkle green onion on top
Done!
