Ranch-Style Turkey Chili

Ingredients
4 poblano peppers
2 large corn muffins, store-bought
2 tablespoons EVOO
2 pounds ground turkey
Kosher salt and freshly ground black pepper
4 cloves garlic, finely chopped
1 large onion, finely chopped
2 tablespoons cumin, a couple of palmfuls
1 tablespoon coriander, a palmful
One 14-ounce can pinto or white beans
2 cups chicken stock
1/4 cup fresh chives, finely chopped
1/4 cup fresh dill, finely chopped
1/4 cup fresh parsley, finely chopped
Hot sauce
1 cup sour cream
Optional Toppers:
Shredded sharp Cheddar
Minced red onion
4 to 5 slices crispy bacon, chopped
Directions
Char the peppers over a gas flame on high heat or under the broiler with the oven door cracked for steam to escape, turning with tongs. Place the charred peppers in a bowl and cover with plastic wrap to steam. Let them cool, then peel, seed and finely chop.
Preheat the oven to 400 degrees F.
Crumble the corn muffins, arrange on a cookie sheet and toast until crispy and extra golden, about 10 minutes. Set aside.
Heat the EVOO in a Dutch oven over medium-high heat. Add the turkey and sprinkle with salt and pepper. Brown and crumble the meat. Add the garlic and onions to the pot and cook to soften, about 5 minutes. Add the cumin and coriander, then stir in the chopped peppers. Add the beans, stock and herbs and simmer 5 minutes. Season with hot sauce.
Turn off the heat and stir in the sour cream to combine. Serve topped with the crispy corn muffin crumbles and any of the other toppings you like.

Thanksgiving Leftovers - Turkey Chili and Pumpkin Cornbread
Turkey Chili and Pumpkin Cornbread
If you're like me, then you probably have a lot of leftovers after the Thanksgiving holiday. Unless you love eating turkey sandwiches for a week straight, here's something I threw together to use up those leftovers and enjoy watching football (and drinking beer) while you're at it! And PUMPKIN! Wow...great way to sneak in some vegetables and feed your family healthy food without them even realizing it. TRY this, you'll love it!
Pumpkin Cornbread:
½ cup butter or margarine, melted
½ cup oil
4 eggs
1 cup pumpkin puree
12 oz beer (I used Mexican beer)
1 cup sugar
~~~mix well, and then add:
1 cup cornmeal
3 cups flour
2 TBSP baking powder
1 tsp salt
Mix well, and then pour into a greased 9x13 pan. Bake at 350 degrees for 30-35 minutes, until done.
Turkey Chili:
In a 4 quart stock pot, add:
1-2 TBSP olive oil
1 yellow onion, chopped
4 garlic cloves, minced
~~~Heat on medium high and cook until translucent and tender. Add:
3 crumbled chicken bouillon cubes
1 lb dry black beans, cooked (or 3-4 cups of any beans you like)
4 cups cooked and diced turkey
1 cup pumpkin puree
1 -16 oz jar medium salsa (or use a 15 oz can diced tomato, and just double seasoning below)
1 -15 oz can sweet corn
1 -12 oz beer (again, I used Mexican beer)
2 tsp ground cumin
1 tsp chili powder
½ tsp ground oregano
Salt and pepper to taste (I didn't need any!)
Let ingredients come to a boil, and then simmer for 20-30 minutes. Serve with warm cornbread, grab a beer (I did), get comfy in front of the football game, and ENJOY!!

Chili’s a crowd-pleaser in any form, but bring in the fall flavor with this delicious and super-easy version. Simply sauté onion, green bell pepper, and yellow bell pepper with garlic in hot oil, then stir in ground turkey, diced tomatoes and pumpkin puree. Season with chili powder, black pepper, salt and simmer until flavors develop. Serve topped with shredded Cheddar cheese and sour cream, of course.
