How To make Lemon Meringue Kisses
2 large egg whites
room temperature
pinch salt 2/3 cup sugar :
sifted
1 teaspoon lemon zest -- finely grated
1/4 teaspoon vanilla extract
OVEN: 250
Cover 2 baking sheets with parchment or foil.
Beat egg whites with salt til soft peaks form. Add sugar very slowly, beating well between additions, til egg whites are stiff but not dry.
Fold in lemon zest and vanilla.
Drop by teaspoonfuls onto the baking sheets or pipe small kisses with a pastry bag fitted with a 1/2-inch star tip.
Bake til dry, but not brown, 40 to 45 minutes. Cool 2 to 3 minutes before removing from baking sheets.
(Can be stored up to 2 weeks in an airtight container.)

How To Make Meringue Kisses | Georgia's Cakes
No matter how many times I make these kisses, piping the meringue is still the most satisfying thing to do!
All they need is 2 ingredients, a splash of colour and voila!

How To Make Lemon Meringue Kisses
Degrease your mixing bow and whisk attachment with lemon juice. Just rub the juice on everything leaving a light coating. Add your eggs and whip until soft peaks form and gradually add your sugar until stiff peaks are formed. I forgot to add it in the video but you want to add your lemon flavoring or oil into either the egg whites directly or mix it into your food coloring before adding to your piping bag. Now pipe out little kisses and bake at a low heat until dry and crisp. Store in an airtight container and use within a week for best taste.
