How To make Lentil Rice Pilaf

rice, brown, uncooked

lentils, uncooked

water

teaspoon
salt

walnut, halves, chopped
1/4
cup
chives, fresh, chopped
1
pepper, to taste
4
cup
vegetables, steamed, such as broccoli, carrot sticks, green beans and sliced leeks
Directions:
In large heavy saucepan heat olive oil and saute garlic and shallots. Do not allow to brown. Stir in curry powder and saute 2 minutes. Add rice and lentils. Saute 3 minutes. Add water and salt. Bring to boil. Cover and reduce heat. Simmer over low heat 40 minutes. Remove from heat and let sit 15 minutes without removing lid. Stir in walnuts and chives. Season to taste with pepper.
Place Lentil Rice Pilaf in middle of heated serving platter and arrange vegetables around it.
VARIATION: Use the Lentil Rice Pilaf as a filling to stuff vegetables, such as green peppers, small winter squash, large zucchini etc. Precook vegetables before stuffing, then bake at 350 degrees until heated through.

Aromatic Lentil Rice Pilaf Recipe
What you need:
1/2 cup green lentils (I prefer sprouted varieties to aid in digestion)
2 tbsp avocado oil
2 cups thinly sliced onions
1/2 tsp salt
1 tbsp finely minced ginger root
1 cup basmati rice, rinse and drain
3 cloves finely minced garlic
1 cup grated carrots
2 tsp curry powder
1 tbsp apple cider vinegar
1/4 cup finely sliced green onions
2 handfuls of microgreens
Directions:
1. Bring a pot of water to a boil and add in the lentils. Boil for 15-20 minutes until just tender and drain. Set aside.
2. Heat a large skillet over medium heat. Once hot, add in 1 tbsp olive oil, onions and salt. Stir occasionally for 10 minutes, until nice and golden.
3. Meanwhile, heat another medium pot over medium heat. Once hot, add in 1 tbsp olive oil and ginger. Cook for 30 seconds until fragrant, then add in rice and 1 1/2 cups of water. Cover the pot with a lid and bring to a boil. Once it reaches a boil, reduce heat to low and continue cooking for 15 minutes, until all the water has been absorbed.
4. In the skillet with the onions, add in garlic and carrots. Cook for 2 minutes, then stir in the curry powder and cook for another 30 seconds, until fragrant. Deglaze the pan with apple cider vinegar and cook for another minute. Toss in the cooked lentils and rice.
5. Stir in the green onions and garnish with microgreens before enjoying.

Quick Lentil and Rice In Instant Pot
Soaked the cup of Lentil for an hour
After an hour drain the water
Press the saute button
Add 1 tbsp Oil
Add 1 tsp cumin seeds
Add ½ cup chopped onion
Add 1 tsp ginger and garlic paste
Add bay leaves
Saute for 30 seconds
Add ½ tsp turmeric powder
Add 1 tsp Cumin powder
½ tsp garam masala
Add Salt as per the taste
Add 1 tsp Paprika
Add 1 medium sized Tomato pureed
Saute everything for 30 seconds
Add a cup of Lentils (soaked for 1 hour)
Add 2cups of washed rice(preferred Basmati)
Add 2 cups of Water
Close the lid and turn the knob to sealing position
Cancel the saute button
Press the pressure cook button and set the time for 10 minutes
Quick release the pressure after 5 minutes of Natural release
Looks perfect
