How To make Lentils with Summer Vegetables

Ingredients

cup
lentils, rinsed, drained, any color
1
each
onion, chopped
2
each
carrots, chopped
2
each
celery, stalks, chopped
1
each
zucchini, quartered, sliced
1-1 1/2
teaspoon
savory, summer
1

pepper, to taste
1

garlic, to taste
1
each
bay leaf
5
cup
water, or part broth

Directions:
Put everything in a large pot, bring to a boil, reduce heat, cover and simmer about 30-40 minutes. Remove bay leaf. Serve over brown rice (or maybe potatoes). Makes 4 reasonably sized servings.
NOTE: Use which ever vegetables you have on hand. Vary to suit yourself. leeks are great in this. If you'd want this to be more soup-like, add more water and a can of tomatoes, pureed.
