Raw vegan chili recipe by @rawvegan.love from the High Protein Muscle Fuel ebook that I got in the Ultimate Raw Vegan Bundle. This has corn, red bell pepper, zucchini, sprouted mung beans, tomatoes, etc.
SALAD DRESSING INGREDIENTS
¾ cup liquid (I used water which I soaked my sundried tomatoes as well as coconut water kefir)

Green lentils -Mung Bean Vegetable Recipe
Tasty Mung Bean Usal, you can enjoy with Hot Roti.
Ingredients:
Main Ingredient: 1 Cup Mung Beans
Process To get sprouted Mung -1 1/2 days: Mung should soak in the water night & next day morning remove the water and shift it to steel sieve covering with lid. Keep it till gets sprouted.
Ingredients 1: Sprouted Mung, 1/2 cup finely chopped Onions, 1/4 cup freshly grated Coconut, 1/4 cup finely chopped Tomatoes, 3/4 tablespoon Chat Masala, 1/2 cup freshly chopped Coriander leaves.
Ingredients 2: 1 tablespoon Jaggery, 1 1/2 tablespoon Mustard seeds, 1 tablespoon red chili powder, pinch of Asafetida, 2 1/2 tablespoon Oil, Salt to taste, 1 tablespoon Turmeric powder, 2 tablespoon crushed Ginger & Garlic, 1 tablespoon each Cumin & Coriander powder or Goda Masala or any vegetable spice
Direction:
• Add Oil in a Pan or Kadai.
• Once Oil is heated add Mustard seeds.
• Add Turmeric powder.
• Add Asafetida.
• Add finely chopped Onions.
• Fry chopped Onions and spices.
• Add freshly grated Coconut & Fry for a while and cook for some time.
• Add half portion of crushed Ginger & Garlic.
• Mix crushed Ginger & garlic.
• Add chopped Tomatoes and mix.
• Add red chili powder and mix well and cook for some time.
• Add Sprouted Mung, you can cook it prior, in pressure cooker as per choice for softness and mix well.
• Cook it for some time.
• Add some portion of crushed Ginger & garlic and mix.
• Add Cumin & Coriander powder or Goda Masala.
• Mix all spices well.
• Put the Lid and cook, if you have already cooked Mung separately, then avoid this step.
• Remove the lid once it is cooked.
• Add water as per required consistency.
• Add Jaggery.
• Add Salt to taste.
• Mix well and let Jaggery dissolve.
• Add remaining portion of crushed Ginger & Garlic.
• Add some portion of Coriander leaves.
• Add some portion of Chat Masala.
• Mix it well.
• Put the lid and cook it for some time.
• Remove the lid and add remaining portion of Chat Masala.
You will get nice aroma of spices.
Mung Usal is ready. Garnish with Coriander leaves
It is very tasty & can enjoy with hot Roti.

For recipes with peppers there is a simple way to remove seeds, this trick works for any type or variety of piquillo peppers such as, standard, Italian, pimento ....
This way of extracting the seeds I learned recently, is for most recipes that is used.

To save time in the kitchen recipes with pepper
Remove the seeds from the red pepper, spicy easily even pepper.
Great for recipes with whole, stuffed, red peppers green peppers.

Bean of the Week: Good Mother Stallard Bean Stew
This is a great recipe with Mother Stallard beans! Also good with any beans.
Good Mother Stallard Bean Stew
3 cups cooked Rancho Gordo Good Mother Stallard Beans (or any beans you like) 1 cup dry=3 cups cooked
1 cup chopped sweet onion
2 small to medium carrots
2 small to medium celery ribs
2 garlic cloves
1 small jalapeno pepper, chopped
2 small tomatoes, cut around the outside (no seeds)
3 cups vegetable stock
fresh thyme, tarragon, parsley (or any fresh herbs you like). I used fresh thyme and parsley
1 bay leaf (optional)
1 bunch kale, removed from stems and chopped (optional)
sherry vinegar
1/2 cup frozen corn
This would also be good with chopped red or gold potatoes, about 1/2 cup
Cook the beans the Rancho Gordo way. You will use 3 cups of drained, but not rinsed, beans.
In a large 12 inch skillet add the chopped onions. Cook until light browned. Add a little water and cover with a lid for a couple minutes. Add the carrots, celery, garlic, tomatoes, jalapeno pepper, herbs and continue cooking the vegetables for a few more minutes, until all are softened are mostly cooked. Add the cooked vegetables and beans to a large pot. Add 3 cups of vegetable broth. Bring to a boil, reduce to simmer and cook for 20 minutes. Add the corn and cook a another minute. I prefer to add kale to individual servings when I reheat the stew, and not the entire pot. You can add all the kale if you like or save it to add when you reheat individual portions. Add a few drops of sherry vinegar when you serve it. (optional)
