How To make Linguine with Mussels, Sun Dried Tomatoes and Olives
12 oz Linguine
1/3 c Sun-dried tomatoes
1/4 c Chopped onions
1/4 c Dry white wine
1/4 c Fish or chicken stock
1 lb Mussels
2 tb Olive oil
2 ts Crushed garlic
1 1/2 c Sliced sweet red peppers
2 1/2 c Diced tomatoes
1/3 c Sliced black olives
1/2 c Chopped fresd basil 2t dried
Pepper 1. Cook pasta in boiling water according to package instructions or
until firm to the bite. Drain and place in serving bowl. 2. Pour boiling water over sun-dried tomatoes. Let soak for 15
minutes. Drain and chop. 3. In large saucepan combine onions, wine and stock. Bring to a
boil. Add mussels. Cover and simmer for approximately 3 minutes, or until mussels open. Discard any that remain closed. Remove mussels from shell and reserve. 4. In medium nonstick skillet, heat oil; saute garlic, red peppers
and tomatoes just until peppers are tender, approximately 4 minutes. Add olives, sundried tomatoes and reserved mussels. Pour over pasta. Sprinkle with Basil and pepper, and toss. TIPS. Replace mussels with clams or use a combination. Buy dry sun-dried tomatoes, not one in oil to reduced calories and fat. Make ahead>>> Early in the day prepare entire sauce. Reheat gently, adding some water if sauce appears too thick.

this is from Marcella hazans cookbook the essentials of classic Italian cooking I got it as a gift from my uncle about 20 years ago and this dish is always by go to because its so simple quick and delicious
ps i did call them noodles once but I do know better and am just bad with words.
Ingredients.
1 pound pasta
Salt
1/3c extra virgin olive oil
2 tsp garlic
Chili pepper to taste
2 tablespoons parsley

15 minute Crispy Salami and Olive, Tomato Pasta
A simple, delicious, and quick pasta meal. Made with salami, sundried tomatoes, olives and white wine using penne pasta. The salami is first fried in a dry pan until crispy. The rendered salami fat is used to make the sauce giving that amazing flavour. Spiced up with chili flakes for that Southern Italian style.
The sauce is thickened using pasta water mixed with parmesan cheese and tomato paste. Make sure you buy a good Italian salami, with a reasonable fat content.
Start by boiling the water and cooking the pasta, make the sauce while the pasta is cooking and if your timing is right, you have a meal in 15 minutes. How awesome is that! Enjoy my Crispy Salami and Olive Tomato Pasta!

Best Midnight Snack Ever!! Aglio e Olio my way!
Aglio e Olio (10 Min Pasta)!
Serving Size for 2
Ingredients
——————
-0.5 lb pasta
-12 large cloves of Garlic
-3-4 Tbsp Olive Oil
-2 tsp pepper flakes (adjust to taste)
-a handful of Italian parsley (Not Curley)
-lemon
-Fresh parmesan reggiano
-salt to taste
Instruction
——————
1. Heat boiling water with lots of salt. (salty as the sea).
2. Cook the pasta to *Al Dante (Always cook 2 minutes less than stated on the instructions. You should hear a snap when you rip the pasta) The pasta will cook with the residual heat from the pan.
3. Finely chopped Italian parsley.
4. In a cold pan add garlic and olive oil. Turn the heat to medium-low and stir often to not burn the garlic.
5. As soon as the garlic turns slightly golden, add chili flakes then add PASTA water to stop the cooking process.
6. Add the pasta along with parsley, some Parmesan, lemon, and salt.
7. Toss the pasta till it’s emulsified.
