Low Fat Alfredo Sauce - Cauliflower Alfredo Sauce Recipe
Chef Jason Hill shares this recipe for low fat alfredo sauce in this episode of Chef Tips. One of our favorite healthy recipes for pasta sauce, this recipe uses cauliflower puree as the base, cutting down on the fat and calories. Instead of loading up on butter and cream, you use mashed cauliflower to thicken and flavor the sauce. It's a great way to sneak vegetables into your family's meal plan, and our kids cannot taste the difference! Honest! Cauliflower recipes are rich in nutrients and anti-cancer properties, so you can't go wrong.

High Protein Three Ingredient Alfredo
This will blow away any high protein or “light” Alfredo you’ve ever had. Actually… it may blow away any Alfredo you’ve ever had in general. The crazy thing is - without any chicken or meat whatsoever - this clocks in at 36g of protein per serving. Just for the pasta + Alfredo sauce!

Makes 4 servings:

Ingredients
320g Protein penne (or pasta of choice, majority of protein comes from the sauce)
12oz evaporated fat free or 2% milk
350g 2% cottage cheese
100g Parmigiano Reggiano
Optional/to taste: salt, pepper, garlic
Add evaporated milk, cottage cheese and parmigiano to a bowl and microwave for 60 seconds. This helps the sauce get smooth when blending. Blend the sauce for 1-2 minutes until completely smooth. Add to cooked pasta in a very low heat pan, let sit for ~10 minutes. Remove from heat and let cool for another 5-10 minutes, and enjoy!

Here is what you'll need!
Healthier Chicken Alfredo Pasta
Servings: 4
INGREDIENTS
1 tablespoon olive oil
2 chicken breasts, cubed
1 teaspoon salt
½ teaspoon pepper
3 cloves garlic, minced
2 tablespoons flour
1 cup chicken broth
1 cup skim milk, or milk of choice
½ teaspoon salt
¼ teaspoon pepper
2 cups spinach
2 cups whole grain penne pasta, cooked
¼ cup parmesan, optional
PREPARATION
1. Heat the olive oil over a skillet and add chicken. Season with salt and pepper, and cook 5-8 minutes, or until no longer pink.
2. Remove the chicken from the pan and set aside.
3. In the same pan, add the garlic and sauté for one minute over medium heat.
4. Sprinkle the flour over the garlic and slowly add in the chicken stock.
5. Quickly stir to avoid lumps.
6. Add in the skim milk, stir ,and allow to reach a boil to thicken sauce. Season with salt and pepper.
7. Once the sauce is thickened, add in the spinach and stir until wilted.
8. Remove from heat and add in the cooked penne, chicken, and parmesan. Stir to coat.
9. Top with fresh parmesan and enjoy!

- 700g Chicken Breast (2 chicken breasts cut into thinner fillets)
- 1 tbsp Italian Herbs

Important cooking notes:
- When seasoning the chicken make sure you cover both sides evenly
- Cook the chicken on medium low heat for 3-4 mins on each side. You don’t want the seasoning to burn
- When adding the alfredo sauce to the pan, make sure the heat is on low. Stir gently till it thickens then add the cooked pasta

How To Make Low-Fat Fettuccine Alfredo | Delish
So good you won't believe it's low fat.
DIRECTIONS
1. Cook the Pasta: Bring a large pot of water to boil. Cook pasta according to package directions. Add the broccoli to the pot during the last 2 minutes of the pasta cooking. Reserve 1 cup of cooking water. Drain pasta. Toss with olive oil and set aside.
2. Cook the Onions: Heat butter and olive oil over medium heat. Add onions, a pinch of sugar (if using) and salt to taste. Cook, stirring occasionally, until soft and caramelized—about 20 minutes. If the onions are browning to quickly, turn down the heat and add a splash of water.
3. Make the Sauce: Meanwhile, whisk together cheese and yogurt in a medium bowl. When fully combined, add the reserved cooking liquid gradually until the mixture is smooth.
4. When the onions are finished cooking, add the pasta and broccoli to the skillet and stir. Pour in the sauce and toss until fully combined, adding more pasta cooking liquid if the sauce is too thick. Squeeze lemon juice over pasta. Serve.

1 large head of broccoli, cut into florets
1 tbsp. butter
1 tbsp. extra-virgin olive oil (plus more to coat pasta)
1 large onion, sliced into half moons
Kosher salt, to taste

1 c. plain, unsweetened Greek yogurt (preferably 2% or full-fat)
1 c. Parmesan cheese, grated
1/2 lemon
