Pastiera Napoletana Ricetta Originale (SUB ENG-FRA-ESP-GER)
La PASTIERA NAPOLETANA è un dolce partenopeo pasquale e i suoi ingredienti richiamano tutti a questa festività così sentita. La sua storia si fonde tra leggenda e realtà, si dice che la ideò la sirena Partenope, ma la sua nascita risale al XVI secolo dalle monache del convento di San Gregorio Armeno. Armonia di sapori questo dolce non è solo il simbolo della Pasqua, ma anche della cucina Campana; una ricetta originale che come quelle di tradizione hanno poi diverse versioni che differiscono di qualche ingrediente, io vi propongo quella più classica.
Questi gli ingredienti per una teglia di 28 cm
Per la frolla:
330 gr farina 00
165 gr burro morbido
130 gr zucchero
1 uovo
2 tuorli
1 pizzico di lievito per dolci
Poche gocce di aroma fiori d'arancio
1 scorza di limone grattugiata
1 pizzico di sale
Per la crema di ricotta:
350 gr di ricotta di pecora
300 gr di zucchero
3 uova
2 tuorli
Mezzo cucchiaino di cannella
1 cucchiaio di aroma fiori d'arancio
70 gr di frutta candita
Per la crema di grano
300 gr di grano cotto
200 gr di latte
Le bucce di 1 limone e 1 arancio

Today on the old cook book show Glen Cooks an apple pie recipe from 1685. This old recipe is for an apple pie... but not once in the title or the main body of the recipe does it mention or call for apples.
So let's talk about apples - the recipe calls for 'Pippins'; none of the pippins available today are the same as in the 1600s. None of the pippins available today are related to the pippins in the 1600s. In the 1600s the word 'Pippin' meant the fruit of the Malus M. domestica tree - what we would call today an 'Apple'. In the 1600s the word 'Apple' just meant 'Fruit' and was applied to every fruit and many vegetables like tomatoes, potatoes, eggplant, pineapples, etc, etc, etc.
A Made Dish of Butter and Eggs.
Take the yolks of twenty four eggs, and strain them with cinnamon, sugar, and salt; then put melted butter to them, some fine minced pippins, and minced citron, put it on your dish of paste and put slices of citron round about it, bar it with puff paste, and the bottom also, or short paste in the bottom.

Lancashire ( LANG-kə-shər, -sheer; abbreviated Lancs.) is a ceremonial county in North West England. The administrative centre is Preston. The county has a population of 1,449,300 and an area of 1,189 square miles (3,080 km2). People from Lancashire are known as Lancastrians.
The history of Lancashire begins with its founding in the 12th century. In the Domesday Book of 1086, some of its lands were treated as part of Yorkshire. The land that lay between the Ribble and Mersey, Inter Ripam et Mersam, was included in the returns for Cheshire. When its boundaries were established, it bordered Cumberland, Westmorland, Yorkshire, and Cheshire.
Lancashire emerged as a major commercial and industrial region during the Industrial Revolution. Liverpool and Manchester grew into its largest cities, with economies built around the docks and the cotton mills respectively. These cities dominated global trade and the birth of modern industrial capitalism. The county contained several mill towns and the collieries of the Lancashire Coalfield. By the 1830s, approximately 85% of all cotton manufactured worldwide was processed in Lancashire. Accrington, Blackburn, Bolton, Burnley, Bury, Chorley, Colne, Darwen, Manchester, Nelson, Oldham, Preston, Rochdale and Wigan were major cotton mill towns during this time. Blackpool was a centre for tourism for the inhabitants of Lancashire's mill towns, particularly during wakes week.
The historic county was subject to a significant boundary reform in 1974 which created the current ceremonial county and removed Liverpool and Manchester, and most of their surrounding conurbations to form the metropolitan and ceremonial counties of Merseyside and Greater Manchester. The detached northern part of Lancashire in the Lake District, including the Furness Peninsula and Cartmel, was merged with Cumberland and Westmorland to form Cumbria. Lancashire lost 709 square miles of land to other counties, about two fifths of its original area, although it did gain some land from the West Riding of Yorkshire.
Today the ceremonial county borders Cumbria to the north, Greater Manchester and Merseyside to the south, and North and West Yorkshire to the east; with a coastline on the Irish Sea to the west. The county palatine boundaries remain the same as those of the pre-1974 county with Lancaster serving as the county town, and the Duke of Lancaster (ie the Queen) exercising sovereignty rights, including the appointment of lords lieutenant in Greater Manchester and Merseyside.

Serves 6-7 persons, makes 15 medium squares
In Greece we have such a great variety of cheese pies aka Tyropita! This Tyropita is called also “Bougatsa” in the Thessaloniki region, a savory variation to the beloved, sweet Bougatsa recipe!
I find the combination of the crispy phyllo pastry together with the zesty, rich cheese filling to be extremely addictive, hence I call this pie the “Queen of Greek Tyropitas”!
It has a few tricks up its sleeve on how to make it crispy. Check all of my instructions and tips for 100% success!!
Suitable for lacto-ovo vegetarians
INGREDIENTS:
Ingredients for the Phyllo pastry:
450 gr. / 1 lb Phyllo Pastry (1 large package), thawed
About 75 gr. / 2.75 oz Butter or Margarine, melted in microwave
Ingredients for the Cheese Mix:
300 gr. / 10.5 oz Greek Feta cheese, crumbled
300 gr. / 10.5 oz Graviera cheese, grated (altern: Gouda cheese)
100 gr / 3.5 oz Myzithra cheese (altern: cottage cheese)
1.5 tsp. dry Mint
Freshly Ground Pepper
Ingredients for the béchamel sauce:
40 gr / 1.4 oz or 1/3 cup Flour, all-purpose
30 ml / 2 tbsp. / 28 gr / 1 oz soft Butter or Margarine
320 ml or 1.3 cups fresh, warm Milk
2 large Eggs

Στην Ελλάδα έχουμε τεράστια ποικιλία από Τυρόπιτες! Αυτή η Τυρόπιτα ονομάζεται επίσης «Μπουγάτσα» στην περιοχή της Θεσσαλονίκης, μια αλμυρή παραλλαγή της πολυαγαπημένης, γλυκιάς Μπουγάτσας!
Θεωρώ ότι ο συνδυασμός τραγανού φύλλου μαζί με τη πλούσια γέμιση τυριών είναι εξαιρετικά εθιστικός, γι' αυτό και ονόμασα αυτή τη πίτα «βασίλισσα των τυροπιτών»!
Έχει μερικά μικρά μυστικά για το πώς να γίνει σούπερ τραγανή. Κοιτάξτε όλες τις οδηγίες και τις συμβουλές μου για 100% επιτυχία!!
