Lobster Macaroni & Cheese ????

Serves 2
Ingredients
8oz Large Fusili pasta
(Or Pasta of your choice)
Water as needed
1/4 cup pink bread crumbs
Chopped parsley
[Cheese sauce]
3 tablespoons butter
2.5 tablespoon all purpose flour
1 cup whole milk
1/2 cup heavy cream
3 oz gruyere cheese
3 oz sharp cheddar
[Lobster]
8oz lobster tail meat
2 tablespoon butter
1 tablespoon minced garlic
1 teaspoon old bay seasoning
Kosher salt to taste
Black pepper to taste
Direction:
1. Preheat your oven to 400 degrees Fahrenheit
2. Bring 2 liters of water to a rolling boil. Generously season with kosher salt and cook your pasta following the direction on the packaging
3. Remove your cooked pasta and reserve.
4. Melt 2 tablespoons of butter, then add minced garlic and fry on low until fragrant. Add the old bay seasoning and mix for a couple of seconds.
5. Combine the lobster meat and cook gently for 1 minute, then remove and reserve.(the lobster will continue to cook in the oven)
6. For the cheese sauce melt 3 tablespoons of butter then whisk in the all purpose flour. Cook on medium low for 4-5 minutes.
7. After that combine the milk, heavy cream and bring to a gentle simmer
8. When the sauce is thickened turn off the heat and whisk in your gruyere and sharp cheddar cheese.
9. Once everything is incorporated, combine the cooked pasta and lobster meat.
10. Fold everything together then transfer to a baking dish, top with panko bread crumbs and bake at 400 degrees Fahrenheit for 15-20 minutes
11. When it done garnish with chopped parsley

Macaroni and cheese is a dish traditionally made up of just a few ingredients and can be likened to many simple Italian recipes, but today “Mac and cheese” is widely known as a quick meal prepared from one box (using very artificial ingredients) and it’s definitely something that sends shivers up the spine of Italians, including me! In this recipe, I will show you my own version, a true Italian macaroni and cheese - and let me tell you, this dish will make you say ‘Mamma mia!’ thanks to its delicious taste, creamy texture and cheesy ingredients. Ingredients:
14oz (400g) macaroni
1 cup )115g) Cheddar cheese
3/4 cup (85g) Gruyere cheese
3/4 cup (85g) Mozzarella cheese
4 tablespoons (30g) Flour
4 tablespoons (60g) Butter
4 cups (1L) Milk
1 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl combine all the cheeses and set aside.
3. Heat large pot of salted water, cook the macaroni to al dente (1-2 minutes less then package instructions).
4. While the pasta is cooking make the sauce: In a large pot, melt the butter, add flour and whisk over medium-low heat. Cook for a couple of minutes, whisking constantly. Gradually add the milk and whisk until smooth. Cook until slightly thickens, about 5-6 minutes.
5. Gradually add 3/4 of the cheeses to the sauce and whisk until melted after each addition. Season with salt and pepper and mix. If you want to add more additions like bacon, herbs or spices, now it’s the time.
6. Drain the pasta and add to the sauce.
7. Transfer to a 12-inch (30cm) round baking dish, sprinkle the remaining 1/4 of the cheese and bake for 20-25 minutes or until golden and bubbly.
Notes:
* serve warm
* you can use any type of cheese that you like
* this is pretty basic version of mac & cheese but you can add topping like bacon, herbs and spices.

8 oz Velveta cheese
8oz cheddar cheese ( plus 1/2 cup more for sprinkling)
8 oz parmesan cheese (shredded or grated)
8 oz Monterey jack cheese
2 eggs
1 and 1/2 cup whole milk
1 teaspoon paprika for sprinkling
