How To make Macaroni& Cheese Joanna's
2 c Uncooked macaroni
3 tb Butter or margarine
1 sm Onion, finely chopped
2 tb Flour
1 t Salt
1 t Dry mustard
1 t Salt
1/4 ts Pepper
2 c Milk
2 1/2 c Shredded Cheddar cheese
TOPPING:
1 Roll (hard crust sourdough
- or french roll) 2 tb Butter
3/4 c Shredded Cheddar cheese
Cook macaroni according to package directions. In large saucepan, melt butter. Add onion and cook until tender. Stir in flour, salt. mustard, salt and pepper. All milk slowly, stirring constantly, and cook until sauce is thickened and bubbly. Add cheese and stir until melted. Combine cooked macaroni and cheese mixture and mix well. Pour into buttered casserole. (I use one that's about 12" square). Top with topping and bake in 375 oven for 20 - 25 minutes. To make topping: tear roll apart and use steel blade of food processor to chop into fine bread crumbs. Melt better in small saucepan then add crumbs and toss until covered with butter. Combine buttered crumbs with cheese and spread over casserole. I generally serve this with sauteed Kielbasa. Kraft's Macaroni and Cheese is great and I always have boxes in the cupboard as it's something my son can make in a hurry. However, "sure doesn't compare to Mom's!" As with many of my recipes, I evolved this from one I originally found on a macaroni box.

Mac and Cheese

Level: Easy
Yield: 6 to 8 servings
Ingredients
Kosher salt
Vegetable oil
1 pound elbow macaroni or cavatappi
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
3/4 pound fresh tomatoes (4 small)
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
Directions
Preheat the oven to 375 degrees F.
Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3-quart baking dish.
Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
