Homemade pizza recipe.

RECIPE
NOTE
Recipe calls for homemade pasta sheets and homemade pink sauce. Recommended alternates if so desired:
Pasta : Barilla, Oven-Ready Lasagne (no boil)
Pink Sauce is a combination of Marinara Sauce + Bechamel Sauce + Vegetable Juice. These sauces demonstrated in video titled Italian Sauces. if time prevents making the marinara sauce alternate options are:
Rau Marinara Sauce, available at most grocery stores
Trader Joe's Marinara Sauce
HOMEMADE PASTA SHEETS
INGREDIENTS
200 g all purpose flour
150 g semolina flour
4 large eggs, beaten
1 tsp salt
DIRECTIONS
1. Add flours with salt to food processor Pulse 5 times to blend.
2. Beat eggs. Total weight should be 200 grams. If less, add water if more, remove some egg.
3. With food processor running, add beaten eggs thru the spout in a steady stream. Dough should ball up after running steady for a while. If it doesn’t, feel the dough, if sticky add flour, if dry add water. Then run it again.
4. Move dough to a floured bread board and knead 4 or 5 times. Form into ball. Wrap in plastic and let rest for 30 minutes
5. After 1 hour, divide rested dough into 6 equally weighted sections
6. On floured cutting board, flatten a segment of dough with the palm of your hand. Flour both sides. Roll out to a 6 X 12 rectangle. Place between sheets of parchment paper to keep from drying. Repeat with the other segments stacking each on top of the previously one then cover with parchment paper.
NOTE: Alternately, roll out pasta sheets using pasta machine.
Set pasta sheets aside until time to cook
NOTE: Pasta sheets will grow when cooked. Recipe will use 4 sheets of pasta. Extra sheets may be used to fill gaps when layering lasagne
STUFFING
INGREDIENTS
6 cups Pink Sauce* (See note below for directions on making Pink Sauce)
1 1/2 lbs of shredded whole milk mozzarella cheese
1 1/2 lb ground turkey (or any type of ground meat)
1 med sweet onion diced
2 Tbsp grated pecorino cheese
DIRECTIONS
1. In a skillet add oil and sauté onions over med heat. Add ground meat and cook until no longer pink.
2. Divide mixture equally into three containers
3. Divide the mozzarella equally into three containers
4. Empty pink sauce into a bowl.
5. Set all aside until time to assemble lasagne
ASSEMBLY OF LASAGNE
PREHEAT OVEN TO 350 DEG.
COOK PASTA
1. Fill large bowl with cold water, set in sink
2. Bring 4 qts of water + 1 Tbsp salt to a boil in a pot with a removable strainer. Boil 1 pasta sheet at a time to avoid pasta sticking together. Boil for 4 minutes then empty pasta from the strainer into bowl of cold water in sink. Remove and dry on towels. Place pasta sheet between parchment paper. Repeat with remaining pasta sheets.
ASSEMBLE
1. In 9 X 13 x3 bake pan, distribute sauce on the bottom of pan. Take a sheet of cooked pasta and trim the length and width to the size of the pan if necessary. Place it over the sauce.
2. If there is a gap not covered by the pasta sheet, take a second sheet, and cut a strip to a width of 1/2 inch wider than the gap and cover the gap with it. Distribute sauce over the top.
3. Empty one of the containers of cheese onto the sauce and distribute evenly. Take a container of meat mixture and distribute it evenly.
4. Repeat with a second layer
5. Repeat with a third layer. Cover third layer with pasta sheet and and a section to fill the gap if needed. Distribute sauce over it, then sprinkle the pecorino.
NOTE: IF using store bought lasagne, soak sheets in hot water and use as many pieces as needed to cover each layer.
Cover with aluminum foil. Bake covered for 25 min., Remove aluminum foil. Bake for 10 more min.
Remove from oven. Let sit for 20 min. before serving.
*NOTE: Pink Sauce Recipe
1 quart (4 cups) of marinara sauce (see video: Italian Sauces 0:48 OR use recommended store bought options: Rau Marinara Sauce OR Trader Joe's Marinara Sauce)
1 quart (4 cups) of Béchamel sauce (see video: Italian Sauces 7:34 OR recipe below)
8 oz (1 cup) vegetable juice
Add all to a bowl and whisk until fully blended
Béchamel Sauce
8 Tbsp butter
6 Tbsp flour
1 quart (4 cups) half & half
1 tsp salt
8 Tbsp grated Pecorino Romano cheese
1. In a high sided sauté pan, melt butter over medium high heat. When fully melted add the flour and stir until sauce becomes pasty.
2. Add half and half, stir constantly until it comes to a boil and becomes thick.
3. Remove from heat add salt and cheese. Stir to mix well.
