How To make Mamma's Stracciatelle with Tiny Meatballs
:
DOM DELUISE EAT THIS :
SOUP----- 1 qt Chicken broth
2 c Water
1/2 c Pastina (my note: any small
-pasta) 1 t Parsley, chpd
1 Carrot, thin sliced
1/2 lb Spinach, julienned
MEATBALLS:
1/2 lb Ground beef^
1 Egg
2 ts Flavored breadcrumbs
1 t Parmesan
2 ts Parsley, chpd
1 sm Onion, minced
2 Eggs, additional
Parmesan
So many different textures and colors. Worth the little extra effort. Soup: In soup pot, combine ingreds; bring to a low boil. Meatballs: Mix. In sm bowl, beat 2 eggs. With wooden spoon, stir soup as you slowly drop in eggs, stirring constantly. Remove from heat; cover; let stand 2 mins. Serve with Parmesan.

Stracciatella Soup AKA #Italianweddingsoup
Usually on New Year's Day, my mom would have the family over for lunch and make Stracciatella soup or as most people know it as Italian Wedding Soup. So here is my version of it, I made it with spinach, my mom would traditionally make it with escarole that she grows in her garden. Well, I did not have any and nor do I plant it, so spinach it is. Mom also uses chicken/turkey stock and I used vegetable stock. The only other difference between my mother's soup and mine would be that her mini meatballs are always all the same size, and mine are you get what you get.
I would like to add another important fact here that traditional Italian Wedding soup does not have pastina in it. That's all I have to say about that.

My grand mother made Eggs and Macaroni for us kids.
My mother made Eggs and Macaroni for her kids.
I made Eggs and Macaroni for my kids and I still eat it today!
The egg and olive oil along with the broth it makes seem to have a healing affect that sooths stomach aches and sore throats.
Here's the recipe:
2 Eggs
Quarter size portion of pasta
1/3 cup Extra Virgin Olive Oil
5 cups purified water
1 Tbsp. Salt
Instructions:
Heat water in a pot until boiling.
Break pasta in half and add to boiling water.
Add salt and cook until pasta is tender. Do not drain the water!
Whip up 2 eggs and pour eggs slowly into pasta and water while stirring.
That's it. You're done.
Good anytime. Especially when you need something to sooth your aching stomach or sore throat.
This isn't a magic formula by any means but it works for me and I love eating this hot Italian egg drop soup anytime day or night. I hope you try it.
Note: Adjust the salt to your taste. Start off with a teaspoon. Add more if you like.
