500 Grams Dried Cannellini Beans
Soaked Overnight
1 Ham Knuckle :
Soaked Overnight
2 Sprigs Thyme
1 Large Sprig Rosemary
1 Bay Leaf
1 Large Onion Chopped
4 Cloves Garlic :
Sliced
4 Strips Lemon Zest
150 Milliliters Maple Syrup
1 Tablespoon Tabasco Or Other Chilli Sauce Or More ???
1 Tablespoon Dijon Mustard
1 Tablespoon Dijon Mustard
Salt And Pepper Topping: 3 To 4 Eating Apples, Cored :
Cut Into Eighths
30 Grams Butter Softened
50 Milliliters Rum :
Optional
Soak the beans overnight in plenty of water, then drain. Put into a pan and cover with fresh water. Boil hard for 10 minutes. Reduce heat and simmer until tender - about 45 to 60 minutes.Drain, reserving cooking water.
Put half the beans, together with half the onion and garlic, into a large, oven proof casserole. Add herbs, tied together with a piece of string. Bury two of the strips of lemon zest in the beans. Lay the ham knuckle on top, then cover with remaining beans, onions, garlic and lemon zest. Mix syrup, Tabasco and mustard and pour over. Season lightly with salt and pepper, then pour over just enough of the reserved cooking water to cover. Cover the casserole tightly and bake at 150F, 300 C, gas mark 2 for 3 hours. Arrange the apple pieces decoratively over the beans. You may not need them all. If there is rather too much liquid left in the dish, scoop a little more out so that the apples can perch more comfortably. Dot with butter and return to the oven for an hour. If using rum, pour it over the top just before serving.

Maple Bacon Baked Beans | The Recipe Rebel
PRINTABLE RECIPE & NUTRITION INFO:
Ingredients
▢6 cups canned white beans (1150 grams or 3 540ml cans) (or 1 lb dried beans -- see note*)
▢1 small onion (finely diced)
▢1 cup water
▢1 can tomato paste 156 ml (½ cup)
▢½ cup pure maple syrup
▢¼ cup apple cider vinegar
▢¼ cup molasses
▢2 tablespoons corn starch
▢2 tablespoons Worcestershire sauce
▢2 teaspoons minced garlic
▢1 ½ teaspoons salt
▢1 teaspoon ground mustard
▢⅛ teaspoon black pepper
▢1-2 pinches red pepper flakes optional
▢4 strips thick cut bacon, chopped
Instructions
Preheat oven to 375 degrees F and lightly grease a 9x13 baking dish.
Drain beans and rinse well (*note below includes method for using dried beans). Place in the baking dish with the onion.
In a large bowl, whisk together the water, tomato paste, maple syrup, vinegar, molasses, corn starch, Worcestershire sauce, garlic, salt, mustard, pepper and pepper flakes.
Pour sauce over beans and stir to combine. Lay the bacon pieces on top of the beans.
Bake for 30-45 minutes, until bacon is cooked through and sauce is thickened and bubbly. You can cover with foil for the first portion of the cook time to prevent splatter if desired, but I recommend uncovering to help crisp the bacon for the last 15-20 minutes.

Tasty baked beans recipe with bacon and maple syrup, perfect for a BBQ side dish, potluck dinner, or just to eat. This cast iron dutch oven recipe can also be made in a casserole dish, but it looks so much better in cast iron.
