Here is how to make it!
2 pork tenderloins, about 1 pound each
salt and pepper
1 small clove garlic, minced
4 tablespoons grainy Dijon mustard or country-style
2 tablespoons honey
2 tablespoons brown sugar
1 tablespoon cider vinegar or balsamic vinegar
(I used Champagne Orange vinegar)
1/2 teaspoon dried leaf thyme, crumbled
1 tablespoon pure maple syrup or Maple Sugar Seasoning
1 tablespoon cornstarch
1 tablespoon cold water
Wash and trim the pork and pat dry; sprinkle lightly with salt and pepper. Place pork in the slow cooker. Combine garlic, mustard, honey, brown sugar, vinegar, thyme and maple syrup; pour over the pork. Turn pork to coat thoroughly. Cover and cook on LOW for 7 to 9 hours, or on HIGH for 3 1/2 to 4 1/2 hours.
Remove pork to a plate, cover with foil, and keep warm. Pour the juices into a saucepan and bring to a boil over medium heat. Simmer for 8 to 10 minutes, or until reduced by about one-third. Combine the cornstarch and cold water; whisk into the reduced juices and cook for 1 minute longer. Serve pork sliced with the thickened juices

Maple Pork Tenderloin Recipe
This is a family favourite. A very flavourful, sweet, mildly spicy sauce that goes very well with the lean tenderloin. I found this one in the Looneyspoons cookbook by Janet Podleski (available on Amazon last time I checked), wonderful easy recipes in there.
1 1/2 pounds pork tenderloin
1/2 cup pure maple syrup (the Aunt Jemima variety of syrup will be almost as good)
2 tbsp soy sauce
2 tbsp ketchup
1 tbsp Dijon mustard
2 tsp grated orange peel
1 1/2 tsp curry
1 1/2 tsp ground coriander
1 tsp Worcestershire sauce
2 cloves of garlic, minced
Trim pork of visible fat. Place pork in a large heavy duty resealable plastic bag. Whisk together all remaining ingredients in a medium bowl. Pour over pork in bag. Seal bag and allow to marinate in fridge for 1 hour.
Transfer pork and marinade to a small roasting pan or baking dish. Roast uncovered at 350F for 40 minutes. Pork should be still slightly pink in the middle.
Let pork stand for ten minutes before slicing. Slice thinly. Drizzle extra sauce over pork and serve.
**you can also skip the marinating time and just pour the sauce over the meat and put it in the oven. I find very little taste difference between the two methods.**
