How to Smoke Baked Beans with Venison | Masterbuilt Electric Smoker
Today, I’ll show you how to make baked beans in the Masterbuilt Smoker. I'm using my Mother's Rum-Baked Beans with Venison for this cook. Although this recipe couldn’t get much easier, these aren’t just any baked beans.
This recipe has a very special meaning. My Mother gave me this recipe many years ago when I got my first apartment and had my first cookout.
One of the great features of this recipe is that there is no need to pre-soak beans the night before. Simply add 1.5 pounds of red or white cooked beans to a baking pan.
Next, fry 6 strips of bacon until crispy. Then, crumble the bacon strips and add 1 cup brown sugar, 1 cup ketchup, 1 tablespoon wine vinegar, ½ teaspoon crushed mint, ½ cup mustard, 1 tablespoon mustard seed, 1 diced jalapeno and ½ cup dark rum along with the bacon drippings to the baking pan. For these beans, I also added some venison sausage. Stir well.
You can cover the beans and bake in the oven at 350 degrees for 3 hours. I’m actually making these in the smoker, set at 275 degrees using Pecan wood.
If the beans are too soupy after 3 hours, uncover and continue cooking until nice and thick.
