How To make Marinated Mushrooms 2
1 lb Fresh mushrooms
1/4 c Soy sauce
1/2 c Red wine vinegar
6 tb Sherry
4 tb Sugar
1 c Finely minced onions
Mix all ingredients but the mushrooms in a saucepan and bring to a boil. Pour over mushrooms that have been cleaned and halved or quartered depending on size. Marinate and chill fo 24 hours before serving. Small button mushrooms can be used whole.

Marinated Mushrooms
Marinated Mushrooms… an absolute favourite in this house! Must be why they never last that long. ????????????
Marinated Mushrooms
Serves 6 | Less than 30 minutes
Ingredients:
2 punnets (250g each) white button mushrooms
10 peppercorns
2 tsp (10ml) coriander seeds
2-5 cloves garlic, sliced (depending on your taste)
2 bay leaves
⅓ cup (80ml) white vinegar
½ cup (125ml) water
3 Tbsp (45ml) sugar
1 tsp (5ml) salt
Method:
Bring a large pot of salted water to the boil.
Plunge mushrooms into water and simmer for about 5 minutes, drain and set aside.
Meanwhile, place coriander seeds, peppercorns, garlic, bay leaves, vinegar, water, sugar and salt in a saucepan. Bring to the boil while stirring occasionally until sugar dissolves.
Adjust seasoning with salt and sugar to taste.
Place mushrooms in a large sterilised jar with a tight-fitting lid and top with pickling liquid (make sure to completely submerge mushrooms).
Pickle for at least 4 hours (24 hours would be best) and enjoy.
If not eaten straight out of the jar (like I do) or enjoyed on warm buttery toast, these mushrooms work well in salads, pasta's and on burger toppings
Cooks tip: The marinated mushrooms can last in the fridge for up to 3 weeks.

Ingredients:
1 1/2 lbs white mushrooms (700 grams)
4 cups white vinegar (960 ml)
1 full tsp salt
1 lemon
Olive oil to fill the jars
4 or more cloves of garlic sliced
1 tbsp dried oregano
2/3 dried chili peppers (optional)
Directions:
Step#1-Wipe your mushrooms with a wet paper towel to remove any soil or quickly rinse them. Do not have them sit in water.
Step#2-Bring the vinegar, juice of lemon, and salt to a boil, add your mushrooms.
Step#3-Cook for about 2/3 until tender not too soft as they need to still have a bit of a bite.
Step#4-Dry and cool on a paper towel or clean kitchen towel.
Step#5-Wash and boil your glass jar for at least 5 minutes. Dry and set aside.
Step#6-Once mushrooms and jars are cooled add your mushrooms, garlic, oregano, and peppers.
Step#7-Mix and add your oil and make sure they’re submerged in the oil.
Step#8-Seal the jar and store in your refrigerator.
Step#9-When you eat the mushrooms make sure you add more oil to the top.

EASY SPICY MARINATED MUSHROOMS IN OLIVE OIL | ANTIPASTO | FUNGHI SOTT'OLIO
In this video I’ll be showing you how to make spicy marinated mushrooms in olive oil. I have used olive oil in this recipe but feel free to use any oil of your choice. For this easy spicy marinated mushrooms in olive oil you will need the following ingredients.
INGREDIENTS
2 cloves of medium sized garlic
Black pepper corn
2 bay leaves
Chilli pepper
Dried Oregano
Sea salt
Olive oil
Vinegar (I used apple cider vinegar)
Shimeji mushrooms (you can use any mushroom of your choice)
Canning jar/mason jar
INSTRUCTIONS
1. Cut, separate and wash mushrooms. Rinse the mushrooms properly to get out excess dirt
2. Slice the cloves of garlic and chilli
3. Pour some water into a medium sized pot/pan, add vinegar, a tablespoon of salt and add your bay leaves
4. Transfer the mushrooms to the pot and let it boil for 5-7 minutes. Take care not to overcook them
5. While the mushroom is cooking prepare a tray lined with a Kitchen cloth or paper.
6. Transfer your cooked mushrooms onto the kitchen lined tray and leave them to cool down naturally
7. While the mushrooms are cooling down, wash your jar with soap and hot water to avoid contaminating the mushrooms
8. When the mushroom have fully cooled down, transfer your mushrooms, black pepper corns, oregano oil, chilli and garlic into the jar topping it up with olive oil.
9. Ensure the mushrooms are fully coated and submerged in olive oil as the olive oil will help preserve the mushroom.
10. Screw on the lid and store in your refrigerator for about 4-5 days
11. After 4-5 days. Take your jar of mushrooms out of your refrigerator and enjoy it with some bread
***Each time you consume your mushroom always top it up with olive oil as the olive oil will help preserve the mushrooms
*** Always keep your jar of mushrooms in the refrigerator
***Always use clean utensils when scooping out your mushrooms
*** The mushrooms can be kept for up to 4 months
