How To make Marinated Prawns
3 lb Prawns, Cooked And Cleaned
1 Onion, Sliced
4 Cloves Garlic
1 pn Oregano
6 Whole Chilis
1 c Oil
2 c White Vinegar
2 Carrots, Parboiled, Sliced
Salt And Pepper To Taste 1 cn Stuffed Green Olives & Juice
Saute 1/2 onion and 2 cloves garlic in oil. Remove and discard. Add vinegar, garlic, onions, chilis, oregano and carrots. Bring to a boil, allow to cool. Add prawns and boil. Leave in refrigerator for 2 days.

Ingredients for Grilled Shrimp:
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Jumbo Shrimp/Prawns - Net 450 gms. (1 lb) after shelling and deveining
Marinade Mix:
- Olive oil- 6 tbsp
- Paprika powder- 1.5 tsp
- Red Chilli Powder/Cayenne Pepper- 1/2 tsp
- Crushed Pepper- 1/2 tsp
- Salt-3/4 tsp
- Brown Sugar- 1.5 tbsp
- Lemon juice-2 tsp
- Garlic, minced- 1.5 tsp
- Fresh Parsley fine chopped- 4 tsp
- Red Chilli flakes- 1/4 tsp
- Oregano - 1/4 tsp
Other Ingredients:
- Olive oil- 1.5 tbsp
Dipping Sauce:
- Sriracha Sauce- 2 tsp
- Lemon Juice- 2-3 tsp
- Honey- 2 tbsp
- Finely chopped Parsley- 1 tsp
Preparation:
- Clean and devein the prawns/shrimp. Leave the tail on.
- Whisk together all the items for the marinade in a bowl.
- Marinate the prawns/shrimp with this marinade for around an hour.
- Add all the items for the Dipping Sauce in a small bowl. Whisk and set aside.
Process:
- Preheat a Grill pan
- Brush it with olive oil.
- Now place the marinated prawns/shrimp side by side to not crowd the pan.
- Grill on medium heat for 2 mins .
- Flip the shrimp pieces to grill on the other side on medium heat for another 2 mins. Now baste with the oil on the pan on this side.
- Grill on each side for another 1 min, basting with the oil left on the pan this time.
- Serve hot with the Dipping Sauce & a dash of lime if required.

Garlic and Chilli Butterflied Prawns
Nothing signals the warm, relaxed days of a Tasmanian summer quite like prawns cooked on the barbecue. Enjoy these with a salad or just as they are.

What do I need?
1 head garlic, cloves peeled
3 large sweet chillies, seeds removed
1 birdseye chilli, seeds removed
100 ml extra virgin olive oil
Salt and freshly ground black pepper
16 king green prawns
1 cup flat leaf parsley, finely chopped
Zest (finely grated) and juice of 1 lemon
How do I make it?
Preheat oven to 180C.
In a small roasting dish place garlic, chillies and olive oil and cook until the garlic is very tender and the chillies have blackened, approx. 15 – 20 minutes. Remove from oven, cool completely and then blitz in a food processor.
To butterfly the prawns, use a serrated knife to slice through the back of the prawns from the head to tail. Remove the vein and open the prawns to lay flat.
Preheat grill pan or barbecue to high.
Place garlic, chilli and oil mixture into a bowl and add parsley and a pinch of salt and pepper. Toss to combine. Brush prawns with chilli mix and cook flesh-side down for 1-2 minutes until red and lightly charred. Turn and continue cooking until cooked through. Remove from heat and sprinkle with lemon zest. Squeeze over lemon juice and serve immediately.

Ingredients for Golden Fried Prawns:
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Prawn or Shrimp - 450-500 gms (shelled and deveined)
Marinate Prawns with :
- Salt- 1/2 tsp
- Pepper Powder- 1/2 tsp
Ingredients for coating the prawns:
- All purpose flour (Maida)- 1 US cup measure seasoned with a pinch of salt and pepper powder.
- Whisked eggs-2
- Panko Bread Crumbs- 1.5 US cup measure
-Salt- 1/4 tsp
- Pepper Powder- 1/4 tsp
Other Ingredients:
- Oil for deep frying
Preparation:
- Clean and devein the shrimps/prawns and make diagonal cuts on the inner side at 3 places to prevent the prawns from curling up.
- Marinate the prawns with salt and pepper powder and set aside for 30 mins in room temperature.
- Take 3 glass containers.
- Add the all purpose flour, whisked eggs and the Panko bread crumbs in each
Process:
- Firstly add the marinated prawns/shrimp in the bowl of all purpose flour and dredge these completely to coat them with the all purpose flour.
- Take the shrimp one at a time and add them in the whisked egg.
- With your left hand coat the shrimp with the whisked eggs and drop them in the bowl containing Panko bread crumbs.
- Now with your right hand coat the shrimp with the Panko breadcrumbs pressing it well to make it stick.
- Arrange in a plate. Repeat till all are done.
- You can arrange in 2 plates and keep these in the freezer for minimum 1 hour.
- You can also freeze this longer and fry later.
- Heat oil till medium hot and add the coated prawns. Do not crowd the pan.
- Do not stir for 1 minute and then stir and fry till golden in colour.
- Fry for a total time of 4- 5 mins on medium heat.
- Fry till they are crisp and golden brown
- Fry the rest in the next batch.
- You may also not fry all the shrimps and keep them frozen and fry later as required.

1 diced shallot

1 cup dry white wine
