How To make Meat and Rice Stuffing
3 lg Onions; coarsely grated
1 lb Minced meat
1 c Parsely; finely chopped
1 c Dill; finely chopped
1 Tomato, grated or
- diluted in 2 tb Butter
1/4 c Rice (short grain)
Salt and pepper to taste 1 c Fresh mint; finely chopped
1/2 c -water
1 tb Tomato paste
1/4 c -cold water

????Crispy skin Thai Style Roast Chicken with Garlic Rice Stuffing Recipe [Xmas Roast ideas]
Xmas Roast Ideas. ????How to cook stuffed roast chicken?
Cooking roast chicken stuffed with garlic rice stuffing for Christmas is easy.
Enjoy a chicken roasted in oven with natural fresh lemon grass, coriander, kaffir lime leaves and other aromatics! The skin is crispy too. You will also get to savour delicious garlic rice stuffing which absorbs flavors from the chicken, herbs and aromatics as a side as well.
Ingredients
Suitable to 2 pax
Marinating (8 hrs or overnight)
1 to 1.2kg of chicken
(head, neck, feet removed
and innards cleaned out)
2 stalks lemon grass
4 pcs kaffir lime leaves
5 garlic cloves
2 stalks of coriander with roots
1 1/2 thumb size ginger
2 TBSP light soya bean sauce
1/2 TBSP fish sauce
Black pepper powder or seeds
Food processor/ mortar & pestle
Oil absorption paper
Stuffing
1 1/2 cup of cooked long grain Jasmine rice
(approx. half cup of uncooked rice)
3 TBSP sesame oil
3 cloves of garlic
1 stalk of spring onion/ scallion
Steps
Marinate (8 hrs before)
1) Shave off tiny hair roots from coriander roots and chop up with leaves.
2) Remove the leaf stalks from kaffir lime leaves.
3) Crush & peel garlic.
4) Peel and chop up ginger.
5) Cut the bottom of the lemongrass, remove the tough outer layers of the lemongrass. Slice the lower light green part of the lemongrass.
6) Pound ingredients in 1) to 5) into paste. Blender can be used as well.
7) Add light black soya bean sauce, add fish sauce. End off with some black pepper powder.
8) Wash your hands and loosen the chicken skin from the meat using fingers. Do not forget about the drumstick or wings. Turn over and loosen the skin as well.
9) Scoop the herb paste prepared in 7) into the underneath the skin throughout the chicken. This will ensure that the flavors are sealed nicely when marinating and roasting.
10) Use oil absorption papers to dry the skin throughout. Including the underside of the wings, drumstick. Place a rack in a dish big enough for the chicken. Flip over the chicken and dry the skin as well.
11) Place chicken breast side up uncovered and on a rack for at least 8 hrs in the fridge.
Rice stuffing
1) Cook about 1/2 cup of long grain rice to yield 1 ½ cup of cooked rice.
2) Peel and chop the garlic. Cut the light green parts of the spring onions. Set aside with together with the garlic.
3) Cut the upper parts of the spring onions. Set aside separately for garnishing.
4) Heat up sesame oil in a small sauce pan at medium heat. Add in garlic and spring onion mix. Stir and wait for the garlic to turn golden brown. Strain the oil from the crispy garlic mix. Use the oil for basting during roasting.
5) Stir in the crispy garlic to the rice. Let the rice cool down
6) Remove the chicken from the fridge. Preheat the oven for 15min at 180 degree celsius. While waiting, stuff the garlic rice prepared in 5) into the chicken cavity.
7) Place the chicken breast side up on a rack with a baking tray. Brush a layer of sesame oil prepared earlier all over the chicken and put into the oven. Roast with top and bottom heat at 180 degree celsius with fan for 50 to 55min. Turn up to 220 degree celsius for 10 to 15 min.
8) Baste the chicken in intervals (eg every 15min) with the sesame oil prepared in 4) to keep the skin moist.
9) Use a fork to pierce the thigh. It is cooked when the juices run clear.
10) Scoop out the rice stuffing.
11) After 15 min of resting time, crave the meat and serve with rice and vegetables.
