In less than an hour, you can create a whole working week's worth of food with this delicious and easy-to-make meatballs recipe. These aren’t traditional meatballs cooked in a rich tomato sauce but the flavours of this sticky sriracha honey sauce will blow your mind. Please enjoy.

Ingredients -
Meatballs -
1kg (2.2lbs) - Lean Ground Beef
2 - Whole Eggs
1/2 Cup (50g) - Panko Bread crumbs
3 Tbsp (60g) - Ketchup
1 1/2 tsp (4g) - Garlic Powder
1 1/2 tsp (4g) - Onion Powder
1 tsp (1g) - Dried Oregano
1 tsp (1g) - Dried Thyme
Seasoning To Taste
Spring Onions (Scallions), Garnish
Honey Sriracha Sauce -
1/2 Cup (120g) - Sriracha Sauce
3 Tbsp (60ml) - Reduced-sodium soy sauce
1 1/2 Tbsp (30ml) - Apple Cider Vinegar
2 1/2 Tbsp (50g) - Honey
15g (0.5oz) - Fresh Ginger, Grated
4 - Garlic Cloves, Grated
Oven Baked Rice -
1 1/2 cups (300g) - Basmati Rice, Washed
600ml (600g) - Boiling Water
Salt To Taste
Aromatics (Optional)
Sautéed Broccolini -
300g (10.5oz) - Broccolini, Ends Trimmed
2 tsp (10ml) - Sesame Oil
Seasoning To Taste
Recipe Notes -
If you prefer to cook the meatballs in the oven, preheat the oven to 190.c - 375.f and line a baking tray with parchment paper. Spread the meatballs evenly across the tray and bake for 18 minutes. This way does take longer than the pan method but can be easier for those that don’t want to stand next to a pan.
Sriracha sauce can be substituted with regular tomato ketchup for a nonspicy alternative. If you don’t want to use sriracha for any reason, it can be substituted with any hot sauce of your choice, including sambal oelek.
The recipe is split into 3 different components. It’s done this way along with the separate nutrition information just in case you’d like to change what you’re serving the meatballs with.
The beef mince (ground beef) I used in this recipe is 90% lean - 10% fat. Fattier beef can be used but if you want to cut the fat content down further, leaner meat is the best option.
Reheating Instructions -
To reheat, place in the microwave for 3 minutes, giving it a mix every 1 minute. It can also be reheated in a pan. To do so, place in the microwave for 45 seconds to take the chill out of the center of the meatballs and place into a pan over medium heat. Doing it this way will create a fried rice-style dish but will still taste amazing.
Please note, if frozen, thaw overnight in the fridge. Don’t reheat from frozen otherwise it will ruin the dish.

One Pot Meatballs and Rice

One Pot Meatballs and Rice | Serves 5
????INGREDIENTS????
20 Meatballs
3 cups / 750ml Tomato Passata (Pureed/Sieved Tomatoes in US)
3 cups / 750ml Beef Stock
1.5 cups Long Grain Rice
3/4 cup / 75g Sun Dried Tomatoes, finely diced
1/4 cup Fresh Parsley, finely diced (plus more to garnish)
1 medium Onion, finely diced
2 cloves of Garlic, minced
1 tbsp Worcestershire Sauce
1 tbsp Tomato Puree (Tomato Paste in US)
1 tsp Dried Oregano
1/2 tsp Chipotle Flakes, or to taste (can sub regular chilli flakes)
Salt, Pepper & Sugar, to taste
Olive Oil, as needed
Parmesan, to serve
????METHOD????
Add a good drizzle of oil to a large pot over medium-high heat and add your meatballs. Fry them until they get a nice crust on them, turning regularly. You don't need to cook them right through at this point, just ensure they caramelize and brown. Remove from pan and drain excess fat if needed (around 1 tbsp left is fine and will add flavour).
Turn heat down to medium and add in your onion into the oil/fat. Fry until they begin to turn golden, then add in sun dried tomatoes and garlic. Continue frying for 1-2 more minutes until the tomatoes soften and the garlic browns, then add in your tomato puree. Fry for a minute or so, then pour in your passata.
Wash out the jar with a little water, then pour in beef stock and Worcestershire sauce. Add in parsley, oregano, chilli flakes, salt, pepper and a good pinch of sugar (to taste). Give it a stir and deglaze the pot with your wooden spoon. Add your meatballs back in, give it one final stir, turn the heat to low then pop on the lid and simmer for 30-45mins. This will allow the meatballs to become soft and juicy, it'll also allow them release flavour into the sauce. If you're pushed for time even 10-15mins will help, just ensure you keep a heavy lid on so the sauce doesn't reduce.
Take off the lid, pour in your rice and give it all a good stir. Pop the lid back on and simmer for 15mins, or until the rice is cooked through, stirring occasionally. If you over reduce just add in a splash of water to help the rice cook through if needed.
Serve up with extra parsley and a good helping of parmesan!

Meatballs in Brown Onion Gravy
Chef Frank shares his grandmother’s recipe for meatballs in brown onion gravy.
INGREDIENTS
Meatballs
1lb ground beef
2 tbsp minced onion
2 tbsp minced bell pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
2 tbsp kitchen bouquet
1 tbsp Worcestershire sauce
1/3 cup milk
1 egg
1 1/2 cups sliced onion
2 tbsp flour
4 tbsp veg oil
3 cups water
Recipe
1. Combine all ingredients to make meatballs. Form golf ball size balls. Sauté...DON’T BURN
2. Remove meatballs from pan.
3. Sauté onions.
4. Add 2 tbsp flour and 2 tbsp veg oil.
5. Cook out the flour
6. Gradually add 3 Cups water.
7. Add 2 tbsp kitchen bouquet salt and pepper.
8. Reduce to desired thickness.
9. Return meatballs to pan
