How To make Mel's Mexican Rice
2 c Long-grain rice;uncooked*
2 Cloves garlic; crushed
1/4 c Corn oil
5 c Chicken broth; **
* NOT Uncle Ben's converted type or the precooked type. ** When using substitutions (see below) always remember to keep the proportions of rice to liquid the same. Heat the oil on med-high in a large skillet or 4-5 quart pot. Add the garlic and sautee about 1 minute. Add the rice and fry it, stirring frequently, until the rice is golden brown. Add the liquid and stir. When it comes to a boil, lower to a simmer, stir once more and cover. Cook until all water is absorbed. This is the basic recipe, and there is a lot more you can do with it. For example: Substitute 1/2 cup tomato juice, or a pureed tomato, for part of the liquid. Substitute part of the liquid with black bean soup broth. Add 1/2 cup frozen peas and carrots. Add 1/2 cup sliced mushroom and green onion. Use beef or other broth instead of chicken. Add 1/2 cup cooked chick peas(garbanzo). Substitute part of the rice with some vermicelli. The possibilities are really endless if you use your imagination. Just stick to the basic recipe and proportion of rice to liquid. From Melanie Miguel

Hi! My name is Mel! I love to cook for my husband and I! I hope you enjoy this video and subscribe for future food content! I like to throw in some lower carb options when I can!
Burrito Bowls:
-Burrito Tortillas
-1 lb of ground turkey or beef
-1/2 an onion chopped
-1 can of diced tomatoes with green chiles
-1/2 can corn
-1/2 can of black beans
-4-6 tbsp taco seasoning
-Dash of chipotle chili powder
Toppings as desired
I enjoy things like:
lettuce, tomato, cilantro, guacamole, Doritos, sour cream, cheese, sriracha,
Knorr Spanish rice Packet
Million Dollar Pork Chops:
-6-8 slices of bacon
-5-6 Pack of boneless pork chops
-Salt, Pepper, Garlic over the pork chops
For the topping:
-1/2 block of cream cheese
-1/4 mayonnaise
-1/2 cup mild cheddar cheese3 green onions chopped
-3/4 of the bacon goes into the topping
-1/2 cup of shredded mild cheddar over the pork chops
Once they are done baking, the rest of the bacon and one more green onion goes over the top!!
For my potatoes I never measure…. ever lol
I cook the potatoes I have then add butter milk or cream. Sour cream, salt (LOTS), pepper, garlic powder, and parsley.
Buffalo Chicken Quesadillas
-2 chicken breast cut in half
-seasoned with pepper, salt and garlic powder
-Buffalo sauce just a little before baking and 1/4 cup after shredding
-Parsley (optional for color)
-1 pack Burrito size tortillas
-Mozzarella Shredded cheese
-Mild cheddar shredded cheese
-Ranch dressing
My side salads were simple this evening! Iceberg lettuce with shredded mild cheddar cheese, ranch and croutons!!
3-Ingredient Pumpkin Bread:
-1 box of spice cake mix (15oz)
-1 (15 oz) can of pure pumpkin
-1 cup of mini chocolate chips

1/2 cup of sugar (100g)
1/4 cup of water (60ml)
1 tsp of instant coffee
for flan:
2 eggs
1 egg yolk
1 tbsp of instant coffee
1 tbsp of warm water
1 can of condensed milk (397g)
fil the same can with milk (290 ml)
1/2 tbsp of liquid vanilla

Feta Tomato Pasta (can serve about 6-8 people with a vegetable side)
-2 Chicken Breasts
-1 (14 oz can) of italian style diced tomatoes
-1 (8 oz) block of cream cheese, cubed
-1 (8 oz) block of feta cheese
-1 tbsp of minced garlic
-1 tsp of salt
-1 tsp of oregano
-1/4 red pepper flakes (OPTIONAL)
-1/4 tsp of pepper
-1/4 tsp of thyme
-1/4 tsp of onion powder
-10-12 oz of pasta, any shape!
Top with parmesan and serve with broccoli.
Enchilada Beef (Serves 8-10 if made with rice)
-1 1/2- 2 lb chuck roast
-1 (10 oz can) of red enchilada sauce
-1 (4 oz can) of green chiles
-3/4 cup of beef broth
-1 cup of your fav salsa, I use a medium heat salsa for kick!
-1 tbsp of minced garlic
-1/2 onion thats been chopped
-1 tsp of chili powder
-1 tsp of cumin
-1 tsp of pepper
-1/4-1/2 tsp of salt ( can always adjust seasonings at the end!)
-1 (15 oz can) of black beans, drained and rinsed
-1 cup of triple cheddar MIXED IN TO BEEF
-1 cup of Triple cheddar melted over the top
Serve with mexican rice, sour cream, pico, and sliced avocado or toppings of choice:)
Cheesy Mushroom and Chicken Pasta (serves approx.4-5)
-1/2 yellow onion chopped
-8 oz of mushrooms, sliced
-1 large chicken breast
-1 (10 oz can) of cream of chicken soup
-1/2 cup of low sodium chicken broth
-1/4 tsp of pepper, or to taste
-1/2 tsp of oregano
-1/2 tsp of garlic powder
-1/2 tsp of onion powder
-SALT TO TASTE
-8 oz of cooked pasta
-1/2-3/4 cup of sour cream
-1 cup of shredded cheddar MIXED IN TO PASTA
-1 cup of shredded cheddar melted on the top
Serve with breadsticks!

Delicious and quick dinner recipe. Why didn't I know this recipe before! An incredibly simple recipe in a pan that anyone can cook. We no longer eat in cafes and restaurants, I cook only homemade food. No oven! Very easy recipe for dinner, a lot of healthy vegetables and a simple dough, finely chop everything and mix. This dish looks like pancakes with vegetables or vegetable flatbread - very tasty. Friends, be sure to cook this dinner and write to me in the comments, did you like the recipe?????????

170 ml warm water.
250 gr flour.
Bunch of parsley.
1 green onion.
1 sweet pepper.
