Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

Grilled Huli Huli Chicken Wings
Huli Huli (turn, turn) is a Hawaiian classic invented in 1955 by a guy named Ernest Morgado in Honolulu Hawaii. I remember the smells coming from the bbq shacks on our way to the beach. This recipe brings back a lot of good memories growing up on the islands. This recipe is simple to make on the Weber kettle or baked in the oven.

Huli Huli BBQ Chicken Recipe - Hawaiian BBQ Chicken
Chef Jason Hill shows you make a delicious and easy Huli Huli BBQ chicken recipe in this episode of Chef Tips.
After visiting the North Shore's roadside huli huli chicken stands, Jason heads home to the chicken to share his version of Hawaiian BBQ chicken.
First, prepare your Huli Huli BBQ chicken marinade the day before you plan to grill.
Though you can prepare this on a rotisserie, the results are more flavorful when you cut chicken into pieces.
This recipe uses a flavorful marinade that includes brown sugar, honey, pineapple juice, sesame oil, fresh grated ginger and crushed garlic.
When cooking Huli Huli chicken, consider using a smoker box. For authentic Hawaiian BBQ, use kiawe wood (known in America as mesquite chips).
Once the honey BBQ chicken sauce has soaked into the meat overnight, remove from the refrigerator and cook over high heat, skin side down, turning a couple times. Then, move to the low burner and shut the lid, where it will slowly cook and smoke for about 30 minutes, or until the internal temperature reaches 165 F. The smaller pieces will cook more quickly than the larger breast pieces.
Serve this with your favorite mac salad, cole slaw and white rice.
