ITALIAN CHICKEN- One Pot Wonder!
A healthy, low fat one pot wonder. Chicken breasts, zucchini, asparagus, tomatoes, and fresh basil create this mouth watering meal in just minutes. A must make!
PRINTABLE RECIPE:
INGREDIENTS:
6 thin chicken breasts
2 tablespoons olive oil, divided
1/2 teaspoon Mrs. Dash onion & herb
1/2 teaspoon Mrs. Dash garlic & herb
1/2 teaspoon Mrs. Dash Italian Medley
2 teaspoons salt, divided
1/2 teaspoon black pepper, divided
1 large zucchini, halved then cut in thin slices
1 bunch fresh aspargus, cut in 2 inch pieces
1 can diced tomatoes (basil, garlic, oregano)
1/2 cup chicken broth
2 garlic cloves, minced
10 fresh basil leaves, coarsely chopped
4 ounces fresh Parmesan cheese
DIRECTIONS:
Heat a deep skillet over medium heat and add one tablespoon of olive oil and chicken.
Sprinkle chicken evenly with seasonings, and 1/2 tsp salt, and 1/4 tsp black pepper.
Cook 2-3 minutes, then flip the chicken, and cook another 2-3 minutes. Transfer to a plate.
Add 1 tablespoon of olive oil to the pan, and then crush the garlic.
Cook one minute, then add the zucchini and aspargus; cook 3-4 minutes.
Add the tomatoes, broth, 1 1/2 tsp salt, and 1/4 tsp pepper, and mix well.
Allow the liquids to lightly boil, and cook until zucchini is fork tender, about 2 minutes.
Add fresh basil and mix it in.
Sprinkle the Parmesan cheese evenly over the top and turn off heat once it melts.

Marinade:
1/2 red onion diced
1 tsp cumin
4 garlic cloves chopped
1 tsp dried oregano
2 tsp salt
1 tsp black pepper
1 Tbs chili powder
2 Tbs olive oil
7 oz can of chipotle's in adobo sauce (add peppers optional)
3/4 cup water
Blend all ingredients in a blender for 1-2 minutes, add to 2lbs of boneless, skinless chicken thighs and marinade in refrigerator for 8 hours to overnight. Grill 4-5 minutes on each side until blackened and minimum 165 degrees internal temp. Let rest for 10 minutes and cube into .5 - .75 inch pieces. Add to your bowl of rice and favorite toppings. Enjoy!!!

Mexican Chicken Casserole
Just 30 minutes in the oven and your family will be enjoying this delicious Mexican Chicken Casserole!

Ingredients
3 cups crushed tortilla chips or Dorito Nacho Cheese chips
15 oz. black beans drained and rinsed
2 cups chopped cooked chicken (rotisserie chicken works well)
1 teaspoon ground cumin
21 oz. cream of chicken soup 2 (10.5 oz) cans
1 10 oz. can Rotel tomatoes undrained
2 cups shredded jack cheese
2 cups shredded medium cheddar cheese
1 tomato diced
1 bunch cilantro rinsed and chopped
Jalapeños optional
Instructions
Preheat oven to 350 F and grease a 13x9 casserole dish with non-stick cooking spray.
Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
Layer diced chicken and black beans over the crushed chips.
Stir 1 teaspoon of cumin into the cream of chicken soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
Sprinkle cheese evenly over the tomato layer and top with remaining crushed chips.
Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
Garnish casserole with cilantro and chopped tomatoes.
Serve immediately with a slice or two of fresh jalapeño.
Notes
Do not drain Rotel tomatoes before adding to casserole.
You can substitute Doritos for regular tortilla chips.
For another flavor element, mix a 4 oz. can of diced chiles into the soup/cumin mixture.
Prepare ahead of time except for the tortilla chips over the top. Cover with plastic wrap and refrigerate. When ready to bake, remove the plastic wrap and sprinkle with chips. Bake until hot and bubbly.
