This is my version of the American Classic Chicken Noodles and Cheese Casserole! It has boneless chicken, yellow squash, acorn squash, eggplant, onions, and is covered with Mexican style cheese and a cup of red wine with half a cup of sugar. I cooked the ingredients as if I was making a pasta dish, then poured it all into this casserole dish and cooked it at 350 for 38 minutes. Chicken and Noodles

Ingredients
One 2- to 3-pound chicken fryer, cut up
2 carrots, diced
2 celery stalks, diced
1/2 medium onion, diced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground thyme
1/4 teaspoon turmeric
16 ounces frozen home-style egg noodles (such as Reames)
3 tablespoons all-purpose flour
Splash of half-and-half, optional
2 teaspoons finely minced fresh parsley
Directions
Start by putting the chicken in a pot and covering it with water. Bring the water to a boil, and then reduce the heat to low. Simmer for 45 minutes. Remove the chicken from the pot. Set the chicken aside to cool briefly.
Shred the chicken with 2 forks, reserving the bones. Return the bones to the pot and boil for 20 minutes. Remove the bones from the pot and discard.
Add the shredded chicken, carrots, celery and onions to the pot. Then add the salt, pepper, thyme and turmeric. Bring the mixture to a gentle boil, and then reduce the heat and simmer for 10 minutes. Stir in the noodles; no need to thaw them first!
Finally, mix the flour with 1/2 cup water until smooth. Stir the flour mixture, the splash of half and half (if you're into that kind of thing) and the minced parsley into the pot. Simmer until the noodles are tender, about 15 minutes, tasting and adding more salt if needed at the end. The soup should be thick and stew-like and your kitchen should smell like home.

Chicken Ramen Noodle Casserole

Ingredients
Six 3-ounce packages chicken-flavored ramen noodles (1 flavor packet reserved; the remaining discarded)
One 8-ounce container scallion cream cheese
4 cups whole milk
2 cups shredded rotisserie chicken (skin and bones discarded)
One 10.8-ounce bag frozen broccoli florets
8 ounces shredded Cheddar
Directions
Preheat the oven to 400 degrees F.
Put the ramen squares in a single layer covering the bottom of a 13-by-9-inch baking dish. Whisk together the cream cheese, milk and the 1 reserved flavor packet from the ramen in a medium bowl. Pour the mixture over the ramen. Scatter the chicken over the sauce and noodles and then scatter the broccoli. Sprinkle with Cheddar, making sure to distribute it evenly across the whole casserole.
Bake until the noodles are cooked through, the cream sauce is bubbly and the cheese melts, 30 to 35 minutes.

Easy Chicken Broccoli Noodle Casserole
INGREDIENTS:
1 package of pasta or noodles - undercooked by 1-2 minutes
1-2 pounds cubed chicken thighs or breasts
1 cup diced onion
1 cup sliced leeks - sometimes I use celery
1 cup diced mushrooms
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 1/2 cups milk
2 cups grated cheese - mozzarella and cheddar
1/2 tsp. black pepper
1 tsp. poultry seasoning
1/2 tsp. celery seed
1 tsp. thyme
3-4 cloves minced garlic
salt and pepper
1/4 cup fresh chopped parsley or 1 tbsp. dried
pinch cayenne pepper - optional
1 cup cauliflower (approx.)
1 cup broccoli (approx.)
oil
Preheat oven to 400 degrees
Cook egg noodles/pasta according to package and
undercook by 1-2 minutes.
In a pan on medium high add oil, onions, leeks and
salt and pepper. Stir and cook 1 minute.
Add mushrooms and minced garlic. Stir and cook 1 minute.
Add chicken pieces, stir and cook for 5 minutes or
until no longer pink. Turn off heat.
In a large bowl add cream of chicken, cream of mushroom,
and sour cream. Stir.
Add spices and stir.
Add chicken, veggies and juices, broccoli and noodles.
Give gentle but thorough stir.
Place in a greased baking dish and level.
Cover and bake for 25-30 minutes.
Remove from oven and top with cheese.
Bake uncovered for an additional 10-15 minutes or until
cheese is melted.
Let rest for 15 minutes before serving.
Enjoy.
