Busy days with kids out of school call for quick and easy meals! So today I'm making a very traditional Mexican breakfast, huevos rancheros. I'm gonna top these off with some avocado and queso fresco ???? These are super easy to make and so delicious.
HUEVOS RANCHEROS INGREDIENTS:
► 3 roma tomatoes
► 1/2 small white onion
► 1 chile jalapeño
► 1 minced garlic
► 1/8 tsp black pepper
► 1 tsp chicken bouillon
► Bunch of cilantro
► 2 eggs
► Refried beans
► Some queso fresco
► Some avocado
► Some tortillas of your choice
► Salt to taste

Easy Mexican Scrambled Eggs Recipe | Healthy Breakfast Recipes | The Sweetest Journey
How to make an easy mexican scramble with simple ingredients.
Ingredients:
1 Tablespoon Olive Oil (15ml)
1/4 Cup Onion, Chopped (40g)
1 Jalapeño Chopped
8 oz. Cooked Sausage (227g) *I used Field Roast Sausage
6 Eggs
Salt & Pepper to Taste
1 Tomato, Diced
Queso Fresco
Fresh Cilantro, Chopped
Directions:
1. In a skillet, over medium-high heat, cook the onion, jalapeño, and sausage with the olive oil for 5 minutes. Add the eggs, salt, and pepper. Continue to cook while stirring until the eggs are cooked through. Serve topped with tomatoes, queso fresco, and cilantro.

Mexican Omelet
Ingredients:
3 large eggs
1-2 Jalapenos, deseeded and diced
1 roma tomato, deseeded and diced
¼ cup diced onion
1 tbsp water
2 tbsp olive, canola, or vegetable oil
1 tbsp butter
½ cup of shredded mexican cheese
Directions:
Deseed and dice 1-2 jalapenos, 1 roma tomato and ¼ cup of onion. Set aside. Mix 3 large eggs and 1 tbsp water in a medium bowl. Whisk the egg mixture for a full minute to impart some air into the eggs. This will ensure that your omelet is light and fluffy. Heat a medium to large nonstick skillet on medium heat and add 1 tbsp oil. Once the oil is hot, add the diced vegetables and saute for 2 minutes. Be sure not to overcook them. Now put them in a bowl and set aside. Clean the pan out with a paper towel and heat the pan on low for a full minute; then add the egg mixture to the pan. Let the eggs sit for a minute. Now separate small pockets in the middle of the eggs so that the mixture has an opportunity to filter down and cook through. Once you see that the eggs are no longer “runny” on top, you can add your sauteed vegetables to one side of the omelet. You can also add the cheese at this time. Carefully fold the side with no veggies over the other side. Cook for an additional minute. You can flip the omelet and cook for another minute, and top with some more cheese. Slide the omelet onto a plate and top with cilantro and serve with sliced avocados and tomatoes. Enjoy!
