How To make Mexican Pie
2 tb Water or vegetable oil
1 md Onion; diced
1 Green bell pepper; chopped
2 c Frozen corn kernals
1 sm Can green chilies, chopped
1 c Tomato sauce
2 tb Chili powder
Salt and pepper; to taste 4 c Cooked kidney beans; mashed
1 1/2 c Cornmeal
1/2 c Unbleached all-purpose flour
1/2 ts Baking powder
3 c Water
Heat the water or oil in a large pot over medium heat and cook the onion for 10 minutes. Add the green pepper, corn, green chilies, tomato sauce, chili powder, and salt and pepper and cook for 5 minutes. Add the mashed beans and cook 10 minutes more over low heat. Remove from the heat and set aside. Preheat the oven to 350 degrees. Combine the cornmeal, flour, baking powder, and water in a large saucepan and cook over medium heat until the mixture thickens, stirring constantly with a wire whisk to keep the cornmeal from lumping. Spread half the cornmeal mixture over the bottom of a nonstick baking dish. Spread the bean mixture over the cornmeal mixture, and then add the remaining cornmeal mixture on top, spreading to cover the beans. Bake for 45 minutes or until the cornbread is golden. STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top
Mexican Shepherds Pie - The Ultimate Comfort Food Recipe!
This Mexican Shepherds pie recipe was one of the first recipes that we made using our Chipotle Paste and over 200 recipes later, it’s honestly still one of our favs.
A Mexican shepherd is a pastor, so this is a pastor’s pie really. We highly recommend you try this Mexican Shepherd’s pie on a cold rainy night. Real comfort food with a gentle warming smoked Mexican chilli kick.
The simplicity of adding our Chipotle Paste to the mince and our Chipotle Mayo to the mash really transforms the dish and takes the pie to another level.
