Tip!!! Make sure your rice is dry before cooking, rinse it at least 30 minutes before cooking

1 1/2 cup white rice my fave Mahatma Rice Enriched Extra Long Grain
3 cups water or chicken broth
1/2 small white onion chopped
1/2 chile serrano chopped
1 minced garlic clove
2 tbsp oil
1 tbsp butter
2 tsp chicken bouillon
1 1/2 tsp garlic salt

Method:
1. Soak the basmati ricein water and keep it aside.
2. Blanch the tomatoes in hot water.
3. Once the tomatoes are blanched, let it cool, peel the skin.
4. Grind the tomatoes into a puree along with chilli powder
5. To a wide pan, add oil and butter.
6. Once the butter melts, add chopped garlic and onions.
7. Once the onion turns transparent, add salt, pepper, cumin powder and mix it.
8. Now add the washed basmati rice and mix it without breaking the rice.
9. Toast the rice for about 2 mins on medium flame.
10. Now add green capsicum, red capsicum, yellow capsicum, carrot, peas and mix gently.
11. Add the ground tomato puree and mix everything.
12. Add Oregano and saute the rice.
13. Finally add water, cover the pot, reduce the flame and let it cook for 20 mins.
14. Delicious Mexican rice is ready.

Maida/all Purpose Flour - 2 Cups
Salt - 1 Tsp
Baking Powder - 1/2 Tsp
Oil - 5 Tbsp
Hot Water
To Make Veg Filling
Cooked Sweet Corn - 1 Cup
Onion - 1 No. Finely Chopped
Green Capsicum Finely Chopped
Red Capsicum Finely Chopped
Green Chilli - 1 No. Finely Chopped
Chopped Coriander Leaves
Salt - 1/4 Tsp
Pepper - 1/4 Tsp
Mixed Herbs - 1/4 Tsp
To Make Quesadilla
Oil
Tortilla
Grated Cheese
Veg Filling
Salsa
Method:
1. Mix maida, salt, baking powder in a bowl.
2. Add oil and mix again. Pour some hot water gradually and prepare the dough. Knead it for 3 mins.
3. Cover and let the dough rest for 2 hours in room temperature.
4. Divide the dough into equal size balls and keep them aside.
5. Dust the rolling surface with some flour and roll each dough ball fine and thin.
6. Heat a tawa and cook the tortillas on medium flame for 40 seconds on each side.
7. Wrap the prepared tortillas in a cloth to make sure they are soft.
8. To a large bowl, add sweetcorn, onions, green capsicum, red capsicum, green chili, chopped coriander, salt, pepper, mixed herbs and mix well. Keep this aside.
9. Grease a pan with some oil and let it heat on medium low.
10. Place the tortilla on it and put some cheese, vegetable filling and salsa on one side.
11. Close it all with the other half of tortilla.
12. Gently press and make sure the filled tortillas are cooked on both sides.
13. Yummy Quesadillas are ready to be served.

This easy homemade yellow Spanish rice recipe (AKA Arroz Amarillo) is a colorful and versatile side dish with peas and carrots. The yellow color comes from the addition of a little bit of saffron or turmeric.
What kind of rice do you use for yellow Spanish rice?
Any, your favorite... I usually go with a fluffy long grain white basmati rice or jasmine, short grain, or brown rice work too. I like long grain basmati rice the best if you're asking ????
Short grain is generally stickier so a longer grain will fluff and separate better. Usually, we love to see this vibrant yellow color, so a white rice variety will show the yellow color the best.
Where does yellow rice come from?
Yellow rice is popular in so many different countries and cultures: India, Puerto Rico, Africa, Asia, Iran, etc... Each has their own nuances. This yellow rice recipe is a basic easy homemade rice recipe.
What spices or seasonings can I use for Spanish rice?
Saffron is very expensive so go with the turmeric :). But, if you have saffron laying around your home, you can substitute a pinch of it (around 10-15 threads) instead of using ground turmeric. Annatto is another spice that will give you a yellowish color.
Wanna make your life even easier? Cool, check out pre-made yellow rice mixes made from Mahatma, Vigo, or Goya. But, honestly, just give this easy recipe a try before you spend the extra cash.
Add some fresh chopped herbs or chopped Spanish Olives to take it up a notch.
Bonus: Use leftovers the next day by adding meat or veggies from your fridge and make a fried rice main dish.
How do I cook rice?
Cook rice according to package instructions if you have them.
Rice generally takes a 1:2 ratio (rice:water), but the more you increase the rice, the less the water ratio gets (so if cooking larger quantities you need less water).
To me, larger quantities of rice mean anything over 1 ½ cups of rice. For 1 ½ cups of rice, I might start with 2 ½ - 2 ⅔ cup of water or broth, but have more at the ready.
Undercooked rice? Add a little more water and/or turn down the heat when cooking and cook for longer.
Sometimes, a crunchy caramelization happens at the bottom of the rice pot (if you're lucky!) after cooking. The Spanish call this crunchy rice socarrat. It's like the crispy edges of a brownie. Enjoy it if you get it!

What seasoning is used to make yellow rice?
Saffron if you've got the cash. I use ground turmeric. Annatto is also a spice that can be used for it's vibrant color.
When do I add the frozen peas to yellow rice?
I remove the Spanish rice from heat and add peas defrosted for 5-8 minutes on top of the steaming hot rice and put the cover back on the pot. This steams them so they keep their vibrant green color. You can add them frozen too but it will take longer.
What can I add to a yellow rice recipe?
Anything you want: garlic, peppers, sazon or goya seasoning (pre-made Latin mixes), salsa (would change the color to a more red Spanish rice), tomato sauce (would change the color to a more red Spanish rice), herbs like cilantro or scallions, spices like cumin or oregano.

Ingredients
• 1 Tbsp olive oil
• ½ cup onion, diced
• ½ cup carrots, diced
• 2 cups long grain rice (white basmati is my favorite)
• ¼ tsp ground turmeric
• ¼ tsp salt
• 3 ½ cups broth or water
• 1 cup frozen peas, defrosted
Instructions
• Bring a medium size pot to medium high heat and add oil. When hot, add onions and carrots and cook ~ 4-5 minutes at a lower heat or until veggies are soft and translucent.
• Stir in ground turmeric to the mixture.
• Add rice and stir to coat.
• Add broth or water after the rice is coated with the oil/spice mixture.
• Bring rice to a boil, reduce heat to medium-low and cook covered ~ 20 minutes (or according to package instructions). Don't stir rice during this process. Just let it do it's thing undisturbed.
• Remove rice from heat and add peas (after rice is cooked) and keep rice covered to steam them ~ 8 minutes (this keeps their vibrant color).
• Remove lid and fluff yellow rice before serving.

Ingredients and a preparation:
* 2 cups of jasmine rice (you may substitute with any long grain rice by the way)
* 1 cup vegetable broth
* 2 tablespoons of salted butter for cooking the rice, and 1 tablespoon for when the mixed veggies are added (no hard and fast rule about the amount of butter to use, if you catch my drift, lol)
* 2 cups of water for steaming the rice
* 1 tsp of salt (adjust amount to taste of course)
* 1/2 tsp vegetable bouillon
* 1 bay leaf
* 1 tbsp onion paste, and 1 tsp garlic paste or 2 cloves of garlic
For the preparation, have your pan on medium heat, and melt your butter, then add your onion and garlic paste, and cook till fragrant (that should take about 45 secs) add the salt, bouillon, bay leaf, and washed rice (yes people, you must wash your rice!!!!!) and toast till rice grains are dry, and toastyyyyy. then add your liquids - case in point, the broth, and water, stir, and cover with lid, and cook for 10 further minutes, or until the liquid is visibly evaporated. Remove lid, and stir to flush rice grains up, then cover with a parchment paper, and lid, then turn heat down to very very very low setting, and cook undisturbed for next 30 minutes. Remove lid, and add mixed veggies, and remaining butter on vegies, cover with lid for about 2 minutes to tenderize vegies. Finally, stir, and serve alongside whatever you love to have rice with.
