A delicious patola, macaroni and chicken soup for this rainy season
INGREDIENTS
1 long Patola, sliced
1 medium Carrot, sliced
½ kg Chicken breast, sliced
1 medium Red Onion, cubes
1 medium Tomato, cubes
5 cloves, Garlic, chopped
1 bunch coriander
1 bunch spring onion
1.5 liters Water
3 tbsp. Cooking Oil
3 tbsp. Fish Sauce
1/2 tbsp. Sea Salt
1/2 tbsp. ground Pepper

Mike’s Meatballs (QUICK cut)

Ingredients
20 ounces (1.4 lbs) meatloaf mix: veal, pork, beef
1 cup Italian bread crumbs
1 cup whole milk
1 cup minced onion
½ cup minced parsley
½ cup pecorino Romano
1.5 tbsp minced garlic
2 large eggs
2 tsp kosher salt
Vegetable oil
Tomato sauce
Recipe
Make the panade by combining breadcrumbs and milk in a separate bowl. Stir and set aside for a few minutes. This will give the meatballs a smooth texture.
Combine all ingredients (except vegetable oil and tomato sauce), taking care not to overmix
Form meatballs a little bigger than a golf ball. Keep a bowl of cold water nearby so your hands stay wet and avoid meat sticking.
Line meatballs on parchment paper in a cookie sheet.
Pour ½ inch of vegetable oil in a frying pan and heat over medium for a few minutes. Oil should be 350 fahrenheit.
Meatballs in. Careful not to overcrowd the pan; fry in batches if you have a small pan. As soon as they start to brown on one side, gently flip and brown the other side. Be very careful or the meatballs will break. Let the cooked meatballs rest on a drying rack.
Meatballs are still not cooked through.
Drain oil from the pan, but don’t clean the pan.
Layer the pan with a half inch or inch of tomato sauce
Return meatballs to the pan, giving about an inch between them, and cover with sauce, just to the top of the meatballs, so they’re still visible. (Again, you may have to do this in batches.)
Simmer for 30 minutes, timing from the point the sauce starts to bubble.
DO NOT STIR OR MEATBALLS WILL BREAK
Serve!

INGREDIENTS
½ kg chicken thigh
2 cups coconut milk
300 grams papaya – sliced
200 grams mustasa leave - cut 2”
1 whole red bell pepper - sliced
2 pieces green chili
100 grams ginger
1 whole red onion – sliced
1 cube chicken bouillon
2 tbsp. cooking oil
1 tbsp. salt

Stove Top Stuffing Meatloaf
Stove Top Stuffing Meatloaf is the perfect quick and easy dinner recipe! With just four simple ingredients, you'll have dinner on the table in a flash.
Servings: 6
Prep: 10 mins Cook: 55 mins Total: 1 hr 5 mins
Ingredients:
▢2 large eggs
▢1/2 cup water
▢6 ounce box Stove Top stuffing mix any flavor
▢2 pounds lean ground beef
▢1/2 cup ketchup divided
Instructions:
1. Preheat the oven to 350°F. Spray a 9×13″ baking pan or dish with non-stick cooking spray; set aside.
2. In a large mixing bowl, whisk the eggs and water together until well combined.
3. Add the stuffing mix, ground beef, and 1/4 cup of ketchup. Use your hands to mix the ingredients together until well combined.
4. Transfer the meat to the baking dish and shape the meat into a loaf.
5. Brush the meatloaf evenly with the remaining 1/4 cup of ketchup.
6. Bake at 350°F for 55 minutes. Cool for 10 minutes then slice and serve.
Notes
For a sweeter glaze, add 2 tablespoons brown sugar to the 1/4 cup ketchup before brushing it over the meatloaf.
