How To make Minature Cheesecakes
1/3 c Graham Cracker Crumbs
1 T Sugar
1 T Margarine, Melted
8 oz Cream Cheese, Softened
1/4 c Sugar
1 1/2 t Lemon Juice
1/2 t Grated Lemon Peel
1/4 t Vanilla
1 ea Large Egg
1 x Garnishes *
* Garinishes can include fresh fruit, or strawberry or apricot preserves. ~-------------------------------------------------------------------------- Combine crumbs, sugar and margarine. Press rounded meassuring Tablespoons- ful of crumb mixture onto bottom of each of six paper-lined muffing cups. Bake at 325 degrees F., 5 minutes. Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed on electric mixer until well blended. Blend in egg; pour over crust, filling each cup 3/4 ful. Bake at 325 degrees F., 25 minutes. Cool before removing from pan. Chill. Top with garnishes just before serving. MAKE AHEAD: Wrap cilled cheescakes individually in plastic wrap; freeze. Let stand at room temperature 40 minutes before garnishing and serving.

Ingredients:
For the crust:
140g (5oz) Biscuits/graham cracker
4 tablespoons (60g) Butter, melted
For the filling:
10.5oz (300g) Cream cheese, room temperature
1/2 cup (115g) Sour cream
1/2 cup (100g) Sugar
2 Eggs
1 tablespoon Lemon juice
Lemon zest from one lemon
1 teaspoon Vanilla extract
For the topping:
Few tablespoons Strawberry Confiture
Fruits
Directions:
1. Preheat oven to 360F (180C).
2. In a food processor or a Ziploc bag crush the biscuits into fine crumbs. Add melted butter and pulse until combined. Divide evenly among 12 muffin cups. Press into the bottom. Bake for 5-8 minutes, remove from oven and set aside.
3. Reduce oven heat to 325F (160C).
4. In a large bowl beat cream cheese and sugar, beat until creamy. Add vanilla extract, lemon juice, lemon zest, sour cream and beat until smooth. Add eggs, one at the time, beating just until combined after each addition.
5. Divide the filling between the cups.
6. Bake for 15 minutes. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours.
7. Spread some strawberry confiture on the top of each cheesecake and decorate with fruits.

Ingredients For the Crust:

6 Tbsp unsalted butter, melted

For the Mini Cheesecakes:
16 oz cream cheese from two 8oz packages, softened
3 large eggs room temperature
14 oz sweetened condensed milk
What You Will Need:
24 standard cupcake liners and 24 count muffin tin
Whipped Cream and Topping Ingredients:
1 cup heavy cream chilled
1 Tbsp granulated sugar
1/2 tsp vanilla extract
1/4 tsp Cinnamon to garnish
1 cup caramel sauce

Cheesecake has always been my weakness. Using Marias biscuit/cookies takes me back to my childhood days in Belize.
???????????? EASY MINI CHEESECAKES
???????????? CRUST:
1 pkg. (4.9 oz) Marias biscuit/cookies (about 1 ½ cups)
2 tablespoons white sugar
5 tablespoons margarine or butter, melted
???????????? FILLING:
2 pkg. (8 oz. each) cream cheese, softened at room temperature
2 eggs
½ teaspoon vanilla
2/3 cups white sugar
Bake at 325 F or 163 C for 20-22 minutes

Amazing Strawberry Mini Cheesecakes Recipe ???? So Easy!
I’m sharing how to make amazing strawberry mini cheesecakes with simple steps! The smooth cheesecake with fluffy whipped cream, homemade strawberry jam, and crunchy graham cracker is a perfect combination to surely impress everyone!
???? The ingredients:
One batch of the recipe makes 8 regular size cupcakes
Cheesecake:
• Cream cheese 8 oz | 225 g (1 US block) *** Updated amount
• Granulated sugar 2.3 oz | 65 g
• Salt 1/8 tsp
• Sour cream 5.3 oz | 150 g
• Heavy cream 2.6 oz | 75 g
• Cornstarch 1 Tbsp
• Yolk 1 yolk (0.53 oz | 15 g)
• Whole egg 1 egg (1.75 oz | 50 g)
• Vanilla extract 1 tsp
• Lemon juice 1.5 tsp
???? Bake at 300 F | 149 C for about 25 minutes with a water bath
* Adjust the time and temperature depending on the oven, amount, size, etc.
Strawberry jam:
* Fills 2 5-6 oz mason jars.
* Make half batch of the recipe for 8 cupcakes from one batch of cheesecake recipe. I made one batch in the video.
• Fresh Strawberries: 15.9 oz | 450 g (1 pound)
• Granulated Sugar: 7.9 oz | 225 g
• Lemon juice: 1.5-3 Tbsp (Change as you like)
[Option 1] Whipped cream frosting:
• Heavy cream 7 oz | 200 g
• Granulated sugar 0.5 oz | 15 g
[Option 2] Cream cheese frosting:
Or try it with any frosting you like!
Decorations:
