How To make Minature Reubens
8 oz Loaf party rye-bread slices
1/4 c Mayonnaise
1 tb Chil sauce
1/2 ts Prepared horseradish
1/2 sm Green pepper, minced
1/4 lb Thinly sliced corned beef
8 oz Sauerkraut, drained
8 oz Slice swiss cheese
Preheat oven to 350oF. Arrange bread slices on large cookie sheet. Bake 5 minutes or until lightly browned on one siode. Remove cookie sheet oven. Meanwhile, in small bowl, stir mayonnaise, chil sauce, horseradish, and green pepper until blended. (Could substitute 1,000 Island dressing). With knife, spread some mayonnaise mixture on toasted side of each bread slice. Top each slice with some corned beef, sauerkraut, then cheese, cutting corned beef and cheese slices to fit. Bake about 10 minutes or until cheese is melted. Serve immediately. Makes about 3 dozen canap

Hey! Thanks for stopping by to make this insanely good sandwich with me.
This Beet Reuben is:
juicy
salty
spicy
crispy
gooey
so freaking good.
To make the beet pastrami:
2 large beets - cooked, cooled, and peeled
1/2 teaspoon coriander seeds
1/2 teaspoon black pepper
1 teaspoon celery salt
1 teaspoon garlic powder
1 teaspoon mustard seeds or grainy prepared mustard
3 tablespoons vegetable oil
1 tablespoon red wine vinegar
To make the sauce:
100 grams mayo
30 grams ketchup
15 grams prepared horseradish
Then all you need is cheese and some good sauerkraut, and slap it all together on some dark Russian rye bread.

How To Make: Reuben Squares
Today I teach you a recipe that I learned recently and love!! These Reuben squares are just like a reuben but so much better because of the buttery flaky crescent roll dough! These make a fantastic appetizer or even a dinner! Serve them up with a side of Russian dressing and you have a tasty treat that I'm sure you will love!

Mini Reubens
Yield: 4 sandwiches
Ingredients:
8 cocktail rye bread slices
½ pound corned beef
4 slices Swiss cheese
¼ cup thousand island dressing
1 tablespoon sauerkraut
Directions:
1. In small bowl, combine sauerkraut and thousand island dressing.
2. Lay out 4 rye bread slices and top with corned beef.
3. Top corned beef with sauerkraut mixture.
4. Add slice of cheese and top with remaining bread slices.
5. Place sandwiches in NuWave Brio Basket and air fry at 375°F for 4 minutes.
Betty's Oven-Baked Mini Reubens
Betty demonstrates how to make Oven-Baked Mini Reubens. These are Reuben-style finger sandwiches that you can make on cocktail rye bread from your leftover St. Patrick's Day Corned Beef!
Oven-Baked Mini Reubens (for 12 mini Reuben sandwiches):
24 slices of cocktail rye bread
½ cup (or more) Thousand Island dressing
cooked corned beef, cut into 24 slices to fit the bread
8 oz. Swiss cheese, sliced into 24 slices to fit the bread
14.5-oz. can shredded sauerkraut, well drained
butter, for greasing pans
Butter a shallow baking pan that is large enough to hold 12 sandwiches made with cocktail rye bread. Also, butter a matching baking pan *on the bottom*. Set the pans aside (exposing the buttered sides) while you prepare your sandwiches. To assemble one sandwich, spread Thousand Island dressing on one side of two pieces of cocktail rye bread. Now, place a slice of Swiss cheese on top of each of the spread pieces of bread. Next, place a slice of corned beef on top of each cheese slice. To finish the sandwich, place a small amount of drained sauerkraut on one of the prepared sandwich halves and put the two halves together. Place the assembled sandwich on your buttered baking pan. Repeat this process, until you have assembled 12 reuben sandwiches on cocktail rye bread and placed them on the buttered baking pan. Now, place the other baking pan, *buttered side down*, on top of the mini reuben sandwiches to provide pressure and stability while baking. Bake at 375 (F) for 10 minutes, until bread is golden and cheese melts. Remove from oven and use a flat spatula to move mini Reubens to a nice serving dish. Serve while hot! This is a great finger food for parties. Also, it is a very easy and tasty way to make reuben sandwiches. I hope you enjoy these Oven-Baked Mini Reubens! Love, Betty
