1/3 c Soft shortening/butter mix 1/3 c Butter, melted 1/2 c Sugar 1 1/2 ts Baking powder 1/4 ts Nutmeg 1/2 c Sugar 1 ea Egg 1/2 ts Salt 1/2 c Milk 1 ts Cinnamon 1 1/2 c Sifted flour Heat oven to 350 degrees. Grease bottoms of 48 small muffin cups. Mix shortening, 1/2 c sugar, and egg thoroughly. Sift together flour, baking powder, salt and nutmeg. Stir flour mixture and milk alternately into sugar/shortening mixture. Fill greased muffin cups 2/3 full. Bake 15 minutes or until golden brown. Dip immediately in melted butter, then in mixture of cinnamon/sugar. Serve hot. Makes 3-1/2 to 4 dozen. Mrs. James Hopkins -----

French Breakfast Puffs
These have been my favorite muffins of all time. When I was in elementary school I used to go to my friend Beth's home and her mom always made these. They have been shared with thousands of students in my 27 years of teaching. While I don't make these too it is always a nice treat every once in a while. Thanks Mrs. Phillips for the recipe! French Breakfast Puffs 1/6 cup shortening 1/6 cup butter or margarine 1 cup sugar 1 egg 1 1/2 cup flour 1 1/2 tsp baking POWDER 1/4 tsp nutmeg 1/2 cup milk Grease muffin tin Preheat oven to 350° Cream together shortening, butter and sugar using a mixer Then stir (not with mixer) in egg Add baking powder and nutmeg Add half the flour and stir Add half milk and stir Add rest of flour Add rest of milk Stir until completely combined. Bake for 25-35 minutes checking at 25 to see if done. They will look pale so don't over cook. Check with a toothpick or fork to see if they are done. Let Cool COMPLETELY Melt 1/2 cup butter and leave keep in a bowl Combine 1 cup sugar and 1-1 1/2 tsp cinnamon in another bowl. Dip each muffin, top and bottom in butter to cover(do not let it soak in the butter) Roll in cinnamon/sugar mixture Let harden a little before eating. Enjoy!
