Bean tostadas are a staple in my home and even as a child I remember bean tostadas. This is an economical way to feed a family and have a delicious meatless meal. I like to use homemade pinto beans or Charro beans but canned pinto beans work just as well in a pinch. You can top the tostadas with the garishes of your choice and enjoy.

INGREDIENTS
15.3 oz can of pinto beans (drained)
2 1/2 Tbsp (37 ml) cooking oil
1 tsp chicken bouillon powder
1/4 tsp chili powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cumin
1/4 tsp black pepper
1/3 cup water
8 to 10 corn tortillas
oil for frying
*garnish with toppings of your choice

Pork Loin Tostadas Recipe
The meat
2 lb lean pork loin boneless roast
1 tsp salt, kosher :
1/2 tsp ground black pepper :
1 tsp onion powder :
1/2 tsp garlic powder :
2 TBSP oil :
Sweet tomato salsa
1 lb tomatoes, ripe
1/4 medium white onion
2 garlic cloves
1/2 tsp dry Mexican oregano :
Salt to taste (1 tsp salt kosher)
1 TBSP granulated sugar or monk fruit alternative:
1 cup water
Blended beans
3 cups cooked beans
2 garlic cloves

MY FAMOUS MEATLESS TOSTADAS / How To Make / buffet style
These Chalupas are way up on my list of favorites, they are easy, unique, hearty and super delicious! theyvare a whole meal in one. whether filled with ground beef, shredded chicken, pork, beans they will amaze you. This was a favorite growing up, my mom fried them crispy, smeared beans on them and topped them with our favorite toppings, whether the tortilla was fried flat or folded like a boat it was always a winner. I love seasoning my ground beef with onions, diced tomatoes, roasted and diced Anaheim peppers, sweet paprika, onion and garlic powder, oregano and chopped cilantro, salt and pepper, this recipe is delicious and is sure to please everyone.
INGREDIENTS----------------
1 Lb. 80/20 ground beef
2 Roma tomatoes (diced)
2 dicedcAnaheim peppers (seeds and veins removed)
1/2 Diced onion
Chopped cilantro
2-3 large minced garlic cloves
1 tsp sweet paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp Mexican oregano
Salt to your liking
Pepper to your liking
Chopped lettuce
Freshly grated Colby Jack cheese (as needed)
diced tomatoes (for topping)
Guacamole (or plain avocado slices)
Sour cream (as needed)
MY EVERYDAY SALSA (LINK BELOW)
1/2 C. water
DOUGH INGREDIENTS-------------------------
2 C. All purpose flour
2 tsp baking powder
3/4 tsp Salt
1 Tbsp shortening
3/4 C. milk

Mexican Tostadas|Tostada Recipe|Vegetarian Tostadas|Beans Tostadas Recipe| Healthy Mexican Snacks
Tostada (Mexican recipe)
Ingredients:
Tostada (store bought) or use corn tortilla – shallow fry with some oil to make tostada
Salt to taste
1.5 cups pinto + black beans
1 large avocado
1 medium onion
1 medium tomato
1/4th cup bell peppers
1 small jalapeno
1-2 Thai chilis
1 Lemon
Oil for sautéing
3 tbsp sour cream
Mexican cheese (garnishing)
Taco sauce (Ortega or old el paso brand)
Steps:
1. Soak and cook beans:
a. Soak pinto and black beans for 3 hours. Add beans to pressure cooker, salt to taste and 2 cups water.
b. Pressure cook for 3 whistles at medium flame.
c. Take pan, heat oil. Once oil is hot add onions and sauté until translucent. Add baked beans, 2-3 tbsp water, taco seasoning, black pepper, taco sauce, red chili flakes and salt to taste. Mix well and cook for few minutes. Keep beans aside.
2. Sauté corn: heat oil in a pan. Add corn (fresh, canned, or frozen) to the pan and cook until you see dark spots.
3. Avocado cream sauce: Take food processor, add avocado, salt to taste, Thai chilis, fresh jalapenos, lemon juice and sour cream. Blend until smooth paste.
4. Pico de gallo: Take bowl, add onions, jalapenos (pickled), tomatoes, salt to taste, black pepper, lemon juice and mix well.
5. Assemble tostada: Take a tostado (warm it in a pan both sides). Add beans layer, spread avocado cream sauce generously, Pico de Gallo, corn, peppers, taco sauce and garnish with Mexican cheese. Top it off with fresh slice of jalapeno or avocado and serve!
