How To make Mom's Best Baked Beans (Vegan)
2 c Chopped onions
1 Fresh garlic clove; peel/fin
4 c Water
1/2 c Firmly packed brown sugar
1/2 c Molasses
2 tb Apple cider vinegar
4 Bay leaves
1 ts Dry mustard
1/4 ts Pepper
1/4 ts Nutmeg
1/4 ts Ground cinnamon
1/8 ts Allspice
32 oz Canned tomato sauce
1 lb Navy beans; dried uncooked
This is a wonderful recipe that I got from a cookbook called Lean Luscious & meatless. It takes a little bit of time to prepare but is well worth the effort. It is the best baked beans I have ever had. You can substitute baby limas for the navy beans. I have changed a few things from the original recipe to suit my own taste so feel free to add any of your favorite seasonings. Rinse & drain beans. Place in a large bowl with remaining ingredients except tomato sauce. Mix well cover & place in the refigerator for 24 hours. TO COOK: Transfer bean mixture to a large oven proof pot. Add tomato sauce. Bring to a boil over medium heat. Reduce heat to low, cover & simmer 45 min stirring occassionally. Preheat oven to 300 degrees. Place pot in oven. bake 4 hours covered. Check beans every half hour or so adding water and stirring as needed. This is truly one of the best homemade bake bean recipe's I have ever tasted!!! No BBQ sauce needed... Don't be fooled the flavors in this recipe will knock your socks off! Using the ancho pepper adds a natural smokey flavor that just can't be beat. Ingredients:
1. 1- 16oz bag pinto beans
2. 1 large yellow onion
3. 2-3 cloves of garlic
4. 1 good size piece of ginger or how ever much you want
5. 2 bay leaves
6. 1 small can of tomato paste
7. 2- 3 Tbs black strap molasses
8. 1 Tbs apple cider vinegar
9. 2 Tbs Bragg's amino
10. 1 Tbs Horseradish mustard
11. 1 to 2 Tbs Sriracha sauce
12. 1 Tbs onion powder
13. 1 Tbs garlic powder
14. 1 Tbs cumin or add to taste
15. 1/2 tsp Ancho powder
16. 3 Tbs pure cane sugar or coconut sugar or you can use agave 1/4 cup
17. 2 Tbs olive oil or oil of your choice
18. 1 - 32 oz Vegetable broth you only may need to use 3/4 of it
19. 2 - Basil leaves
Directions:
Soak beans over night in water or pressure cook them.
Heat up a skillet add oil to saute, add chopped onions,minced garlic and ginger to pan and saute till onions are translucent.
Then rinse beans and add to pan along with 16 oz of veggy broth and bring to a boil then reduce heat to a simmer and add tomato paste and the rest of the ingredients listed above let simmer till beans are soft, around 15 min. add more veggy broth if needed or water. Make sure to continue to stir so beans don't burn to bottom of pan.
Preheat oven to 375 Fahrenheit
When beans are soft remove from heat and place in a casserole dish and cover with tin foil
place in the oven and bake them for around 15 min. or desired texture.
Serve by themselves or over a potato or any other verity of ways.

Vegan Baked Beans
Ingredients:
1.5 pounds dried navy beans, presoaked overnight
1 cup of brown sugar
1 tbsp. pink salt
1 tbsp. cinnamon
3 green onions, sliced on the bias
1 cup ketchup
1/2 cup molasses
1/2 cup spicy brown mustard
1 cup maple syrup
1 large red onion
Water to cover the bean mixture completely
Method:
Add all ingredients into a crockpot, stir to combine and cover completely with water. Set the crockpot on high for 6 to 8 hours. Add more water if necessary during the cooking process.

Vegan Instant Pot Baked Beans
Baked Beans - makes 6 servings
*Ingredients:
- 2 cups navy beans
- salt & pepper
- 1 onion
- 2 cloves garlic
- .25 cup blackstrap molasses
- .25 cup maple syrup
- 1 tbsp soya sauce
- 1.75 cups water
- 2 tsp dijon
- 2 bay leaves
- 1 tbsp apple cider vinegar
*Instructions:
1. Soak beans over night. Drain them.
2. Chop onion and garlic.
3. Create molasses mixture: maple syrup, molasses, soya sauce, water. Mix well.
4. Turn the Instant Pot to sauté and sauté the onion and garlic in some water.
5. Add in molasses mixture, beans, 2 bay leaves, and a dash of salt. Mix well and make sure beans are under liquid.
6. Pressure cook on high 20 mins + natural release 20 mins. Make sure the vent is on sealed.
7. Release any additional pressure and open lid. Change to sauté. Add in Dijon and vinegar. Stir well and remove from heat when desired consistency is reached.
8. Serve and enjoy! The beans will thicken over time.
***If you don't own a pressure cooker, this recipe can easily be done on the stove top. It will just take longer for the beans to cook :)
