Everyone needs a good red lentil soup recipe – hearty, comforting, warming, and bursting with myriad flavors. While there are many lentil soup recipes, this Moroccan-spiced variation is my favorite. It’s one of those soups I make over and over again.
One of the things I love about this soup is that it is incredibly flavorful. It contains a lot of Moroccan spices – cumin, coriander, ginger, and cayenne pepper – bold, fragrant, and vibrant.
The recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, nut-free, and refined sugar-free.

Let's learn how to make a cozy soup perfect for fall and winter - lentil soup or as we call it in Arabic, Shorbat Addis! INGREDIENTS
2 to 3 tablespoons extra virgin olive oil
1/2 yellow onion, diced
2 teaspoons minced garlic
2/3 cup shaved carrots
1 1/2 cup red lentils
4 cups chicken broth
2 to 3 cups water
1 1/4 teaspoon black pepper
1 teaspoon turmeric
1 to 2 teaspoons cumin, to taste
1 to 2 teaspoons salt, to taste
Red pepper flakes, to taste
Lemon wedges, to squeeze on top
*For the water and broth, you can use only broth too! To make this vegetarian/vegan, use vegetable broth.

How to make an authentic Moroccan Harira
Harira is more than just a soup. For most Moroccans, it is centre of the Iftar (Breaking fast) table. It has almost a cult status and it lives up to the hype. Harira is an amazing tomato soup. It’s a delicious mix of spices and fresh herbs, with vegetables (mainly tomato). You can cook it with or without meat but if you can, use bones and your Harira will be at whole other level !!!
Ingredients:
Beef - Cubed 200 g
Lentils 100 g
Chickpeas 100 g
Shaaria (Thin Pasta) 50 g
Smmen (Ghee) 2 tsp
Olive Oil 2 Tbsp
Salt 1.3 Tbsp
Pepper 1 tsp
Ginger 2/3 Tbsp
Turmeric 1 Tbsp
Cinnamon 1/4 tsp
Egg 1
Flour 50 g
Tomato Puree 400 g
Onions 1 Medium
Parsley 20 g

Celery 70 g
Water for base mix 300 ml
