How to Make Tomato Sauce - 1 of the 5 Mother Sauces
Tomato sauce is one of the five mother sauces that every cook should know. This tomato sauce recipe is easy to make and all you need is a few basic ingredients and some patience. Whether using fresh or canned tomatoes, this method of cooking in the oven will give you the starter sauce to build on. Make it your own family marinara sauce by adding basil, oregano, mushrooms, sausage, beef and let it marinate - all day just like your grandmother did.

2 tablespoons butter
3 tablespoons all-purpose flour
3 ounces (95 g) salt pork, diced
1 carrot, diced
1 stalk celery, diced
1 medium onion diced
2 cloves garlic, diced
1 sprig fresh thyme
1 bay leaf
2 - 28 ounce (794 g) cans crushed tomatoes
16 ounces (480 ml) beef stock (chicken or vegetable can be used)
Pinch sugar
Salt & Pepper
Preheat the oven to 350°F (180°C)
In a large, oven proof skillet or pan, over medium heat, add the salt pork and butter, stirring occasionally until the fat begins to render (2 - 3 minutes).
Add the carrots, celery and onion, and cook, stirring frequently, until the vegetables are softened and translucent (5 - 7 minutes).
Add the flour, and stir to coat the vegetables. Continue to cook, stirring frequently until the flour starts to lightly brown. (around 5 minutes).
Add the thyme, bay leaf, garlic, tomatoes and stock. Season with salt, pepper and a pinch of sugar. Stir well to combine, and bring to a boil.
Once boiling, transfer to the oven and set the lid slightly askew. Cook in the oven for 90 minutes.
Remove from oven and retrieve the bay leaf and thyme sprig. Allow to cool slightly, then force through a fine meshed strainer or blend with an immersion blender until smooth.
Refrigerate for up to 3 days.
