2 lb Fresh mushrooms 1/4 lb Butter 1 pk Garlic or Italian "Good -Seasons" mix Saute cleaned mushrooms in butter for 5 minutes. Sprinke with the package of "Good Seasons" dressing mix. Simmer covered, do not boil, for 1 1/2 hrs. Serve with toothpicks. They go fast.

The above recipe is a first in the appetizer series . It's a simple modern thai one bite dish made using easily available ingredients and is plated in soup spoons adding an elegant and refined touch .
The recipe has 3 components : 1. The caramelized mushroom 2. The chilli peanut crumble 3. The curried aioli
The mushrooms need to be marinated in a refrigerator for the flavour to set in .
The chilli peanut crumb can be made ahead and cling wrapped.
An aioli is basically fragrant mayonnaise . Here we flavour it with thai red curry paste and kaffir lime leaves to give it flavour depth and kick. This too can be made ahead and cling wrapped and refrigerated for later use.
When cooking the mushrooms in quantity cook in batches as crowded mushrooms release water and they lose their flavour.
Finally we use kaffir lime leaf slivers to garnish , giving it a strong contrasting character.
