STEAMING SEASONING----------------------------- 2 Ginger slices 2 Shallots 1/4 ts Salt 1 tb Chicken fat (or oil) 1 tb Stock (or water) * (or large fresh button -mushrooms) 1. Mix stir-fry seasoning ingredients well. 2. Remove stalks from mushrooms and discard. Soak mushroom heads for 20 to 30 minutes until soft, then steam with steaming seasoning ingredients for 30 minutes. Remove and stir-fry with stir-frying seasoning mixture until there is no liquid left. (If button mushrooms are used, soaking and steaming is not necessary. Marinade for Chicken
3 Tbsp oyster sauce 4 Tbsp corn starch
Seasoning Sauce
1 Tbsp sugar 1/2 Tbsp corn starch 3 Tbsp Shaoxing wine 2 Tbsp soya sauce 2 Tbsp dark soya sauce 4 Tbsp oyster sauce 1 C water

PORK CHOP WITH MUSHROOM IN OYSTER SAUCE
INGREDIENTS: 4 pcs fatless pork chop 300 grams mushroom 5 tbsp oyster sauce 1 large onion, chopped 3 cloves garlic , chopped 1 1/2 tbsp parsley , chopped 1 tsp white sugar 2 tbsp oil 1 cup water 2 tbsp cornstarch Salt and pepper to taste
Procedure: 1. Dash the pork chop with salt and pepper and set aside. 2. Heat frying pand and drizzle with oil . 3. Fry pork both side until golden brown. Remove cooked pork chop and set aside. 4. On the same pan sauté onion , garlic and stir fry add in mushroom and parsley cook for 2-3 minutes. 5. Pout half of water and sugar mix well. 6. Dilute cornstarch on the remaining water and pour to frying pan stir until cook or until sauce thicken. Salt and pepper to taste. 7. Add the cooked pork chop flip once . 8. Share and enjoy!
