BRAISED CHICKEN WITH CHESTNUTS AND SHITAKI MUSHROOM
Starchy, sweet, rich in flavor, chestnuts are popular edible nuts of the northern hemisphere origin. The nuts are native to the mountainous forests of China, Japan, Europe, and North America.
Chinese dried mushrooms (also called black mushrooms or dried shiitake mushrooms) have an intense meaty flavor that enhances the flavor of soups, stir-fries, and braised dishes. However, the dried mushrooms must first be rehydrated.
Gently rinse the dried shiitake mushroom with cold water.
Place the dried mushrooms in a bowl with warm water to cover. (Note: You will probably need to place a small plate, lid from a pot, or another item on top of the bowl to keep the mushrooms from floating).
Soak the Chinese dried mushrooms in warm water for about 20 to 30 minutes or until softened. The exact soaking time will depend on the thickness of the caps. The warm water temperature should be roughly the same temperature as bath water.
If you’re in a hurry, soak the dried mushrooms in hot water for 15 to 30 minutes. This is not ideal, because hot water will affect the mushrooms' flavor. After you have softened them in hot water, you will find dried shiitake mushrooms aren’t as aromatic as they usually are.
Cold water is definitely the best way to rehydrate dried shiitake mushrooms as it helps the mushrooms retain all their flavor

pieces of chopped chicken
shiitaki mushroom
chestnuts
light sauce
dark sauce
cooking wine
sugar and salt
ginger,onion,garlic
cooking oil
Heat up oil in a wook
Sautee ginger,onion and garlic
add in Chicken pieces,simmer until slightly brown.
add in mushrooms and chestnuts simmer for atleast 2 min.then add light , dark sauce and sugar.. simmer for atleast 5min in low flame woth the lid, add in water enough to cook the chicken... boil it until the liquid reduce and thickens. finally add salt if needed and lastly add vooking wine simmer for 2 min then transfer into serving plate..

In this episode, I'm making an easy version of a vegan dim sum favourite: sticky rice with mushrooms and chestnuts.
This dish is traditionally made by wrapping sticky rice with mushrooms, chestnut and some kind of meat in lotus leaf, but this version skips the lotus leaf wrapping and doesn't use any meat to make it vegan or fully plant based.
By keeping the braising sauce simple and using gluten free soy sauce instead of pre-made sauces, this dish is also gluten free and clean eating friendly.

Use this in all your recipes - proper Mushroom Duxelle recipe
Duxelles is a (keto) ingredient to many recipes. Duxelles is an intensely flavored sautéed mushroom mixture that is a classic of French cuisine.
Traditionally, this mushroom paste is used in everything from a basic French Mushroom Omelet to Beef Wellington. It also can be used to flavor soups, sauces, roulades, and served as a side!
It's full of fat and flavor! I keep a container in my fridge at all times.
Frech cooking can be strict BUT Duxelles recipes are not set in stone. You can vary the type of mushroom used or combine several (cremini, morel, shiitake, porcini, white button). Use/don't use shallots and garlic. As long as you have mushrooms as your main ingredient then butter following that, you'll have duxelles.
The mixture freezes well and keeps in the fridge for a month after cooking. Go ahead and doubled or tripled this recipe if desired.
Recipe:
2 lbs mixed mushrooms
4 tbsp butter
1 small shallot
2 cloves garlic
1. Cut all ingredients into 1/4 inch cubes.
2. Place on low heat, in a large pan, after melting the butter slowly in the pan (to avoid brown butter)
3. Cook the ingredients down until all water has been cooked out of the mushrooms. Place in an airtight container. Enjoy!
