3 Nectarines; up to 4
-peeled & sliced, to make 1 -cup slices 1/2 c Orange juice; fresh
1 tb Lemon juice
1 tb Sugar
1 c -Cracked ice

Ingredients/Mise en place:
4-6 medium nectarines pitted/sliced
1 stick melted butter
1 cup flour
2 cup sugar
3 tsp baking powder
pinch of salt
1 cup milk
1 Tbsp lemon juice

Hey y’all from north Mississippi!
Today we are taking some nectarines that were gotten at the local farmers market and making jelly! That’s right you heard me Nectarine Jelly Made Simple. Now this is an easy recipe and the juice jells up nicely.
4 cups Nectarines juice
5 cups Sugar
1/2 cup lemon juice
1 box of surejell
Cut the nectarines up discarding the seeds into a large saucepan. Use the 2:1 ratio of fruit to water
Boil until the fruit comes to a rolling boil. Reduce the heat and simmer for 30 minutes.
Now line a colander with cheese cloth and pour juice into another bowl through the cheesecloth. Take time and let drain with out pushing the pulp through.
Once drained juice is collected you can put up in refrigerator for up to 48 hours if need be.
Get jars and flats ready by washing jars and adding to oven at 225 degrees to sterilize jars. Put flats in small sauce pan and add water bring to a slight simmer.
Add juice lemon juice and pectin in a large thick bottom saucepan together.
Bring to a rolling boil and add sugar.
Return to rolling boil for one minute
Take off heat and ladle into clean jars.
Add hot flats and add rings. Hand tighten.
Set aside and enjoy on toast.

SWEET SUMMER NECTARINE CAKE
Hello and welcome to Sweet As Creations
Today we are making a sweet nectarine cake.
This nectarine cake is simple to make, with its sweet nectarines, buttery sponge and cinnamon sugar topping, this summer cake will go down a treat.
Ingredients
100g butter
½ cup sugar
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
3-4 nectarines
Topping
2 tablespoons sugar
1 teaspoon cinnamon
Bake at 180°C / 350°F fan bake for 30-35 minutes

Macerated nectarines and berries in prosecco (or other sparkling wine) is a delicious, easy and healthy summer dessert. There are several different options for the fruit! You can substitute peaches for the nectarines. And either raspberries, blackberries or a combination of both can be used. Join Eric from Simply Elegant Home Cooking to see how easy it is to prepare this summer fruit dessert. Be sure to allow 30 minutes for the fruit to macerate! Once the sugar is added, allowing the mixture to sit out at room temperature will draw out and concentrate the fruit’s juices and will create a complex layering of flavors. This dessert is great to serve at a party or other celebratory event, or really any time on a hot summer day!
Ingredients:
-4 nectarines or peaches (white nectarines were used in the video and were delicious)
-12 ounces blackberries and/or raspberries
-12 ounces strawberries (preferably organic), stems and centers removed, cut into quarters
-1 tablespoon Grand Marnier or Cointreau
-1 cup prosecco or other sparkling wine
-1/4 cup sugar
-12 fresh mint leaves, finely minced
-zest of ½ lemon
Recipe:
-Thoroughly wash and dry all of the fruit. Slice the nectarines into thin slices and remove the cores of the strawberries and cut them into quarters.
-Combine the nectarines, berries, sugar, orange liqueur, mint, and lemon zest into a large bowl and mix. Allow the mixture to sit out for 30 minutes at room temperature, stirring every five minutes.
-After the fruit has macerated for 30 minutes, add the prosecco and serve immediately. Garnish with a light dusting of sugar if desired.
