How To make Neighbor's Cucumber Dill Dip
1 ea Cucumber; Md
1/4 t White Pepper
2 tb Fresh Dill; Chopped, OR
2 t Dried Dill; Crushed
1 1/2 c Mayonnaise
3/4 c Sour Cream
1/4 c Green Bell Pepper; Diced
Peel, seed and finely dice the cucumber. Using a colander, squeeze out any excess water from the cucumber chunks. Place in a bowl and blend will with the pepper and dill. Blend in the remaining ingredients and mix thoroughly. Cover and chill. Makes about 3 cups of dip. SUGGESTED DIPPERS: Broccoli, Cauliflower, Radishes, Carrots, Onion Crackers

How to make Gurkensalat | German Cucumber and Dill Salad
German Cucumber and Dill salad is a very refreshing summer salad that can be eaten all year long too. Usually Sour Cream is used, but I have given it a bit healthier twist with cottage cheese and yoghurt and taste very close to sour cream.

Time to pack the pickles, Randy & I work together today in the kitchen to can these wonderful cucumbers! This recipe was gifted to me by my neighbor it was his great grandmother's recipe. It is an old-fashioned recipe which makes an amazing flavored and crunchy pickle! It has the flavor of the pickles and crunch I remember from my childhood when my Mom canned pickles. By the time I was old enough to want to can my Mom no longer remembered her pickle recipe, this one is as close as it comes!! The recipe is no longer an approved recipe, as is.
In order to make this recipe approved as a canning recipe, one could water bath can the pickles for 10 minutes.

Disclaimer: We are new to canning, Please do your research prior to canning any recipe, get to know your recommendations for canning safely for the area you live in, we refer to several Ball canning books and do our research prior to trying any canning recipe.
Dill Pickles: This is an old fashioned recipe, no longer Ball approved! Note: it is now recommended to water bath can for 10 minutes for longer lasting shelf stable pickles.
Brine:
1 quart water
1 Cup apple cider vinegar
1/4 C canning salt
I usually multiply this x4 to start, depending on how many pickles you have.
clean jars and cucumbers to prepare to use for canning
Fill jars with pickle size cucumbers and dill and /or garlic if you prefer.
pour boiling water over the pickles in jars. Let stand 10 Minutes, Drain.
Pour boiling water over pickles AGAIN. Let stand for 10 minutes. Drain.
Pour boiling brine over pickles and seal jars with warm lids and rings. leave the jars undisturbed for 24 hours, check seals and label and date.
Notes:
Allow 1/4 inch head space.
Allow 3 weeks to 1 month for pickles to mature prior to eating
Pack in warm jars. *I use oven at 200 for 20 minutes to sterilize my clean jars.
*to make more current a recipe it is recommended to water bath can for 10 minutes*
Or these would be great refrigerator pickles too made in small batches and stored in the fridge.
